It's beginning to look a lot like Christmas...πŸŽ„

And I have been feeling super festive!

The Christmas Tree is up... loving the magical Christmas lights ✨

I've been playing Christmas music... and singing along in the car 🎢🎡

Ticking presents off my list... 🎁

And thinking about Christmas lunch! πŸ˜‹

Thanks to inspiration from Cookie+Kate, I think I have the salads menu sorted.

I've been eyeing off her "Favourite Broccoli Salad" (pictured); with broccoli greens and a splash of red cranberries, it's the perfect statement salad for the festive season.

She also has some beautiful bright beetroot salads that might make the cut too!

πŸ₯° I had such a beautiful time yesterday morning at the Masterclass for Mums!

We spoke about simple ways you can nurture your body with food, to provide busy mums with sustained energy, balanced moods, and better sleep.

Making breakfast the priority was a key takeaway for many mums; starting the day with nourishing food to provide the nutrients your body needs throughout the day.

So this yummy cacao granola from made the perfect addition to the gift bags, a delicious, protein-rich option to kick off the morning right.

The Butter Chicken spice mix from Mingle is another favourite of mine. It's a great example of how easy a wholesome dinner can be; add a few simple ingredients and you’ve got a tasty, nourishing meal the whole family will love.

There’s also a cute snack pack of roasted chickpeas or fava beans β€” just oil, salt, and lots of crunch. Perfect for those salty afternoon cravings, and they actually keep you satisfied (unlike chips that disappear quickly… and leave you hunting for more).

And finally, a wholesome choc–banana muffin recipe β€” simple, nutrient-dense, and easy to whip up for the week ahead.

When life is busy and body's need soothing, breakfast is soup and eggs!

Breakfast is usually quite the event for me, a big cook up of eggs with veggies and kale, cooked in ghee, and topped with avocado. Breakfast is my "me time"; sitting outside in the sunshine enjoying a fulfilling meal to start the day β˜€οΈ

But this morning I felt like something quick and easy. We've had some mild cold symptoms sneaking in the household, and soup was calling my name!

Heating up a small pot of soup takes literally a few minutes, no more effort than cooking a piece of toast. Homemade is AH-MAZING of course, but if you need a quick grab and go I like the Lazuppa brand. Boiled eggs are just as simple and give me my morning protein dose to fuel me for the day ahead! πŸ˜‹

Here is a quick and easy, tummy pleasing BANANA MUFFIN recipe to fuel your kids with sustained energy for the transition back to school - and just as yummy for work snacks too! πŸ˜‹

πŸ‘©β€πŸ³ Pre-heat oven to 170 degrees C (fan forced)
& lightly grease a 12-muffin tray with macadamia oil.

πŸ‘©β€πŸ³ Mix together dry ingredients
(Thermomix 20 seconds, speed 5):
200 g buckwheat flour
1 tsp baking powder
1/2 tsp bi-carb
2 tsp of ground cinnamon

πŸ‘©β€πŸ³ Add wet ingredients, and mix through
(Thermomix 15 seconds, speed 5):
3 medium bananas, well mashed
1 egg
50 ml macadamia oil
1/2 cup of Greek yogurt
100 g honey

πŸ‘©β€πŸ³ Divide mixture evenly into the 12-muffin tray.

πŸ‘©β€πŸ³ Bake for approximately 35 minutes (or when lightly browned on top and springs back to the touch).

EXTRA YUMMY when eaten warm!

These are always a hit with the kids, feels like a TREAT, only HEALTHY!
