Picking Persimmons with Poppy is great fun 😊.
I have been loving eating these as they have slowly been ripening. I've been loving looking at the Zinnias in a vase on my table and the Persimmons ripening up in the bowl next to them. It's been something bright and colourful that's been bringing me joy..

Fermented Honey Garlic is really easy to make and great to have on hand for winter. It has a much milder taste than raw garlic so it can be great for kids (I'm yet to try it with my little one). You can also give your little ones, who are over 1, the garlic-infused honey.

This is made with local honey and the garlic that my parents grew over last winter. They have just planted their garlic crop for this year and it's all starting to come up at the moment. This is made with Australian purple garlic but they also grow Russian garlic which is my absolute favorite.

Fermented Garlic Honey Recipe

1 cup of garlic cloves
1 cup of raw local honey

1. Lightly bruise the garlic cloves with the side of your knife to remove the skins
2. Place garlic cloves in a jar and cover with honey
3. Leave the jar lid slightly loose and sit in a cool dark place for about a month
4. Rotate the jar back and forwards every day or so to make sure the honey is coating the garlic.
5. After a month, continue to store in a cool place.

It's helpful to place a plate underneath while it's fermenting in case it bubbles up and some leaks out. Making sure the jar is only half full also helps to prevent this. The second photo is before fermentation and the first photo is after.

I am currently doing my Counselling placement at Equip Country in Chinchilla for my Masters of Counselling. I'm needing some clients to counsel to get my practical hours up. If we're friends I can't counsel you, but if I don't really know you or you're a friend of friend that's great. These sessions can be online or in person. This last Thursday and Friday we bottled all of our olives. We used lemon, garlic, thyme and rosemary, all for the garden, to flavour them!

✨ Basil Pesto Recipe ✨
This has been delicious every time I've made it. We were given a lot of macadamia nuts a little while ago and so I've been using them but you could substitute them for other nuts or seeds.

This is Sorghum porridge with fresh figs and 100% maple syrup and sorghum bread with homemade basil pesto. Both of these have been so good 🥰
My dad makes the bread in our family and has been giving us some every time he makes it. At the moment he's using half tapioca flour, half sorghum flour. It's a yeast loaf and he uses the bread maker to cook it.
I've been thinking about sharing the basil pesto recipe I've been using. Would anyone like it?

I haven't shown my face on here for a while so I thought I'd say hi! This is me with one of my beautiful big elderflower clusters I picked back in October. We have since moved from the Northern Rivers and are living on my parents organic farm in South west Queensland. I'm a mum, a wife, a naturopath and I'm currently studying my Masters in counselling.
Is anyone keen to see more gardening and farm content?

We have so many figs coming in at the moment at home! We are drying 4 of these dehydrator trays every day. If you'd like to get your hands on some delicious fresh figs you can order them online from my parents website and pick them up from the Chinchilla markets on Sunday.
