Malabar style Mutton Biryani or Erachi Choru is popular amongst the Mappila or Muslim community of the Malabar region of Kerala (northern part of the state).

This is a pukki style biryani where both the rice and meat is cooked individually and then layered and assembled to form the final dish. This dish is a delicate play of whole spices and aromatics that create the flavour backbone and when combined with the umami flavour from the meat creates an epic biryani that you will not forget in a long time.

A quickish Japanese chicken kare/curry for dinner tonight!. The Japanese kare blend from is one of my favourites, a delicious combination of spices that makes my work so much easier. Just 30 minutes and a steaming bowl of chicken curry and rice on the dinner table!

Thali of the week...with regional dishes from different parts of India. The kind of food you will find in Indian homes and not restaurants.

Boiled white rice
Cabbage carrot thoran
Unakka sravu chammanthy (dried shark sambal/chutney)
Koorka mezhukkuparatty (chinese potato stir fry)
Urad dal tadka (split black gram curry tempered with spices)
Rasam (tomato tamarind soup)
Tamarind ginger pickle
⠀⠀⠀⠀⠀⠀⠀⠀⠀
While I enjoy all the different preparations, my absolute favourite and the 'star' of this thali for me is the unakka sravu chammanthy, losely translated as dried shark sambal/powdered chutney. If you are a fan of dried fish, then this is a must try.
