Easy low cal 15 minute San Choy bows! 🤤 (Asian style lettuce tacos)
Ingredients:
Large lettuce leafs or lettuce cups
One bag of vermicelli noodles
Lean beef or turkey mince
1/2 red onion
1/2 cucumber
1 whole avocado or avocado dip as seen in photo.
One packet of organic corn chips
Sweet chillie sauce

Key utensils - fry pan, kettle
Method:
First prepare the salad ingredients. Wash the lettuce and tear into individual leafs then dice the cucumber and the red onion.
Next fill the kettle and let boil. Whilst the kettle is boiling turn stove onto a high heat with oil. Place frypan on
top.
Once the kettle has boiled place vermicelli noodles into a large bowl and pour boiling water over the top untill noodles are covered. Cover and leave for 5 minutes. Next place the mince into the hot saucepan.
Cook the mince for 5-7 minutes or untill fully cooked. Add sweet chillie, salt and pepper then take off the heat and into a bowl. Next drain the noodles and place back into the same bowl.
Lastly, get everything ready to serve.
Place corn chips into a bowl, place lettuce cups onto a plate and red onion and Cucumber on a seperate plate. I used avocado dip because it’s easy! But if you want to use an avocado mix into a bowl with olive oil, lime and salt and pepper!
How to build the bows?!
Simply grab a lettuce leaf and place the noodles on top followed by the mince then the avocado, then lastly place the cucumber and red onion on top then drizzle sweet chillie! Add crushed up peanuts to add that bit of crunch 🙌

Salmon soba noodle bowl 🍲

INGREDIENTS
* 
270g pkt soba noodles
* 
1/2 cup (125ml) teriyaki marinade
* 
1/4 cup (60ml) lime juice
* 
3 tsp sesame oil
* 
1/2 bag of spinach
* 
2 tbs sesame seeds, toasted
* 
4 Coles Australian Skinless Salmon Portions
* 
1/2 punnet of cherry tomatoes, sliced into halves
* 
4 baby cucumbers, peeled and sliced
* 
1 small packet of sultanas
* 
1 large carrot, peeled, cut into long matchsticks
* 
2 eggs, boiled, peeled and sliced.

*1/2 slab of halloumi

* Olive oil

* Salt and pepper

METHOD
* Step 1 
Cook the noodles in a large saucepan of boiling water following packet directions. Refresh under cold water. Drain well.
* Step 2 
Meanwhile, combine the teriyaki marinade, lime juice, oil and ¼ cup (60ml) water in a small jug.
* Step 3 
Place the noodles in a bowl with 1½ tbs of the sesame seeds. Add ⅔ cup (160ml) of the dressing and gently toss to combine. Season.
* Step 4 
Spray the salmon with olive oil spray. Season with salt and pepper. Heat a large frying pan over medium heat. Cook the salmon for 2-3 mins each side for medium or until cooked to your liking. Take off pan then add more oil and cook the halloumi on the same pan for 30 seconds each side or until brown.
* Step 5 
Divide the noodle mixture among serving bowls. Arrange the tomato, cucumber, egg, carrot, egg, sultanas and spinach around the noodle mixture. Top with salmon. Drizzle with the remaining dressing. Sprinkle with the remaining with sesame seeds.

Want to get fit but are too time poor?
Not sure where to start or are afraid of the gym? Cant shake that ‘ill start on Monday mentality’?

It’s definitely hard to break old habits and even harder to create new ones especially if they drive you out of your comfort zone. However staying in the same place is much more painful in the long run. Trust me.

I myself wasted 7 years of my life seeing little to no results because my training and eating was all wrong.
This is when I decided to educate myself on how to efficiently train and how to properly eat without having to starve or waste time in the gym.

Teriyaki lamb with soba noodles.

* 1 tbsp olive oil
* 350g babycorn
* Cup of Green beans
* Yellow and red capsicum deseeded and finely sliced
* 300g roast lamb, cooked and cut into strips
* 175ml teriyaki and ginger stir-fry sauce
* Soba noodles (whole packet)
* Handful of peanuts (chopped up)
*
Method:
* Heat the oil in a large wok or frying pan. Add the babycorn and stir-fry for 2 minutes.
* 2 
Add the lamb cook for 3-5 minutes then add the capsicum, green beans, stirfry salad mix, stir-fry sauce and continue to cook for 10 minutes on a medium high heat until the vegetables are just tender and the sauce has thickened.
* 3 
Cook the soba noodles according to the instructions on the packet. Add to the wok, mix well. Lastly devide into 4 serving bowls then Garnish with peanuts.

Mango & banana smoothie bowl 🤤

Ingredients:
1 mango
1 frozen banana
1 cup of Almold milk
1 tablespoon of honey
1 ice block

Toppings:
2 strawberries
1/2 banana
1/4 mango
1 mint leaf
Chia seeds
Teaspoon of Shredded coconut
Small handful of muesli (optional)

Method:
Blend together all ingredients.
Pour the smoothie into serving bowl then top with all the toppings 🥰

Chicken, pumpkin and walnut salad.

INGREDIENTS
800g butternut pumpkin, peeled, chopped
2 tablespoons maple syrup
1 tablespoon olive oil
1/2 cup walnut pieces
olive oil cooking spray
600g chicken breast fillets
1/2 cucumber
1/2 punnet of cherry tomatoes
100g spinach and rocket salad mix
1 red onion, thinly sliced
2 tablespoons olive oil
1/4 slab of Danish feta
Teaspoon of Black olives (optional)
Pesto and garlic dressing.

METHOD
Step 1
Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Place pumpkin and oil in a bowl. Toss to combine. Place pumpkin, in a single layer, on prepared tray. Season with salt and pepper.
Step 2
Bake for 20 to 30 minutes, adding walnuts to tray for the last 8 minutes of cooking, or until pumpkin is tender.
Step 3
Spray a frying pan with oil. Heat over medium-high heat. Cook chicken for 6 to 7 minutes each side or until cooked through. Transfer to a plate. Stand, covered, for 5 minutes. Thinly slice.
Step 4
Meanwhile. Chop all salad ingredients. Once cooked, Place pumpkin, walnuts, chicken, salad mix and dressing in a bowl. Sprinkle feta. Toss to combine. Serve.

I’ve always had doubts in myself like anyone else. But as you grow and age. You realise doubt is the only thing holding you back. You aren’t any different then anyone else. If you want something you can have it. You can’t allow doubt or other people determine your future. Do whatever it takes. Vegan tofu noodles🍜

Ingredients:
one packet of cauliflower noodles
3 garlic cloves
one bunch of Asian greens
a half a bunch of Spring onions
half a bag of snow peas
one red chilli
one block of firm tofu
salt pepper
Chinese five spice sauce
sesame oil
Soy sauce
sweet chili sauce
Honey

Key utensils - saucepan, frypan or wok.
method:
Cook the noodles, bring saucepan of water to boil and cook noodles according to packet instructions until tender, drain and rinse under cold water and set aside. Next, make the sauce - combine crushed garlic with 1 1/2 tablespoon of five spice sauce, 3 tablespoons of vinegar, 1/3 cup of soy sauce, 1/3 cup of sweet chili sauce and 1 tablespoon of honey. season with salt and pepper.
Next prepare the vegetables - trim Asian greens into 3 cm Lengths, slice spring onion into 3 cm Lengths and reserve tops for the garnish. Next trim half of snow peas, slice the chilli and set aside with spring onion to top for garnish. Next cook the tofu in a large frypan or wok over a medium-high heat. Dice the tofu and coat with 2 tablespoons of five spice, 1 tablespoon of sesame oil, a dash of salt and pepper, 1 tablespoon of sweet chili and soy sauce. Cook for 2 to 3 minutes each side until browned and warmed through. Add the prepared vegetables to the pan along with majority of the prepared sauce and cook tossing for two minutes until tender. Take off heat, next divide the noodles amongst bowls and spoon even amounts of remaining sauce. top with the tofu and vegetables and garnish with chilli and Spring onion 🤗
