Easy low cal 15 minute San Choy bows! 🤤 (Asian style lettuce tacos)
Ingredients:
Large lettuce leafs or lettuce cups
One bag of vermicelli noodles
Lean beef or turkey mince
1/2 red onion
1/2 cucumber
1 whole avocado or avocado dip as seen in photo.
One packet of organic corn chips
Sweet chillie sauce
Key utensils - fry pan, kettle
Method:
First prepare the salad ingredients. Wash the lettuce and tear into individual leafs then dice the cucumber and the red onion.
Next fill the kettle and let boil. Whilst the kettle is boiling turn stove onto a high heat with oil. Place frypan on
top.
Once the kettle has boiled place vermicelli noodles into a large bowl and pour boiling water over the top untill noodles are covered. Cover and leave for 5 minutes. Next place the mince into the hot saucepan.
Cook the mince for 5-7 minutes or untill fully cooked. Add sweet chillie, salt and pepper then take off the heat and into a bowl. Next drain the noodles and place back into the same bowl.
Lastly, get everything ready to serve.
Place corn chips into a bowl, place lettuce cups onto a plate and red onion and Cucumber on a seperate plate. I used avocado dip because it’s easy! But if you want to use an avocado mix into a bowl with olive oil, lime and salt and pepper!
How to build the bows?!
Simply grab a lettuce leaf and place the noodles on top followed by the mince then the avocado, then lastly place the cucumber and red onion on top then drizzle sweet chillie! Add crushed up peanuts to add that bit of crunch 🙌
