Something for the sweet tooth

Caramel Cheesecake 🌿💞🌿

BASE
1 pkt of vegan sweet biscuits hobnobs/neice/ginger nut
1 cup desiccated coconut
100g vegan butter/marg melted

METHOD:
Crush biscuits mix well with coconut & melted butter and press into springform cake tin or a greased cake tin lined with baking paper leaving enough to come up over the sides to help lift it out once set. Place in freezer whilst preparing the filling.

FILLING
300g Biscoff spread
1 cup plant milk (I used plain so good soy)
1 x 200g tub vegan cream cheese
1 teaspoon agar

METHOD

Place all ingredients in a saucepan and whisk over medium heat until bubbling. Reduce heat and cook until thickened (3-4 minutes) remove from heat.
Pour into chilled base and place back into freezer for 1 hour.

Remove from freezer and decorate with drizzled choc and sprinkle with crushed flaked almonds.

Keep refrigerated.

Can be kept frozen without choc drizzle, thaw day before serving and decorate.

I was always daunted by the thought of baking home made bread. Because of a sensitivity to gluten I started making my own bread with organic flours from my local bulk food store and have since moved on to baking sourdough bread. I can now enjoy eating bread again without the pain & discomfort from regular baked wheat bread. Here are a few of my home made bread bakes.

Falafel... yummo!

Recipe:
Authentic vegan falafels

Ingredients
* 500g dry chickpeas
* 1 small onion, roughly chopped
* 1/2 cup chopped fresh coriander
* 1/2 cup chopped fresh parsley
* 4 cloves garlic
* 1.5 tbsp flour or chickpea flour
* 1 tsp salt
* 2 tsp cumin
* 1 tsp ground coriander
* 1 tsp black pepper
* 1/2 tsp cayenne pepper
* 1/4 tsp ground cardamom
* 2 tsp of baking soda dissolved in 1 tbsp of cold water and mix it into the falafel mixture after refrigeration.

1. Pour the chickpeas into a large bowl and cover them with cold water and soak overnight. They will double in size as they soak so make sure the bowl is large enough to accommodate.
2. Drain and rinse the chickpeas.
3. Place the chickpeas into a food processor along with all other ingredients except baking soda and water, and pulse together until a coarse meal forms. Scrape the sides down and process till the mixture starts to come together as a paste but still having some texture to the chickpeas. Don’t over-process!
4. Place mixture into a bowl, stir and remove any large chucks, cover and refrigerate for 1-2 hours
5. Mix baking soda with water and stir through the falafel mix
6. Shape into balls or patties using roughly 2T of mixture per falafel
7. Falafels can now be cooked by which ever method suits: pan fried (2-3 minutes each side), deep fried, air fried or oven baked until golden brown
8. Serve with flatbreads, hummus, garlic aoli, couscous, tahini sauce and coleslaw
