Have you been searching for a healthy after school snack for the kiddos?
These Nutty Honey Homemade Granola Bars are perfect for after school munchies!
Packed with wholesome oats, nuts, and dried fruit, they’re a lunchbox friendly way to keep kids energised and satisfied all day long.

Ingredients:
- 2 cups old-fashioned rolled oats
- 1/2 cup chopped nuts (such as almonds, walnuts, or pecans)
- 1/4 cup honey
- 1/4 cup peanut butter or almond butter
- 1/4 cup dried fruit (such as raisins, cranberries, or chopped apricots)
- 1/4 cup mini chocolate chips (optional)
- 1 teaspoon vanilla extract
- Pinch of salt

Directions:
1. Preheat your oven to 175°C. Line an 20 x 20cm baking tray with parchment paper, leaving some overhang for easy removal.
2. Spread the oats and chopped nuts evenly on a baking sheet. Toast in the preheated oven for 8-10 minutes, stirring halfway through, until lightly golden and fragrant. Remove from the oven and let cool slightly.
3. In a small saucepan, heat the honey and peanut butter (or almond butter) over low heat until melted and smooth, stirring frequently.
4. In a large mixing bowl, combine the toasted oats and nuts, dried fruit, mini chocolate chips (if using), vanilla extract, and a pinch of salt. Pour the melted honey and peanut butter mixture over the dry ingredients and stir until everything is well coated.
5. Transfer the mixture to the prepared baking pan, pressing it down firmly and evenly with a spatula or your hands.
6. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
7. Remove from the oven and let cool completely in the pan on a wire rack.
8. Once cooled, lift the granola bars out of the pan using the parchment paper overhang. Place on a cutting board and cut into bars of your desired size.
9. Store the granola bars in an airtight container at room temperature for up to one week, or in the refrigerator for longer shelf life.

Prep Time: 10 minutes, Cooking Time: 25 minutes, Total Time: 35 minutes
Makes 12-16 bars

Friday night = pizza night 🍕😋
Check out this delicious recipe from how good does it look❗
Cottage Cheese Pizza
Ingredients:
For the Pizza Crust
¼ cup all purpose flour or GF AP flour substitute
½ teaspoon baking powder
½ cup cottage cheese I used Good Culture 2%
1 large egg
For Topping
2 tablespoons pizza sauce or Basil Pesto
3 to 4 tablespoons Mozzarella cheese
½ cup shredded chicken or cooked, crumbled turkey sausage or meatless sausage
Small handful sliced cherry tomatoes
Chopped fresh basil
Balsamic glaze optional
Instructions:
Place a rack in the center of your oven and preheat to 375°F.
In a medium bowl, whisk together the cottage cheese and egg. Sprinkle the flour and baking powder over the top. With a rubber spatula or wooden spoon, stir to evenly combine.
Place sheet of parchment paper on top of a baking sheet (or pizza stone). Spread the cottage cheese mixture into a round crust shape that is about 8 inches across.
Bake for 20 to 25 minutes, until golden at the edges and dry to the touch on top. Remove from the oven. Increase the oven temperature to 400°F.
Spread crust with the sauce, sprinkle with Mozzarella cheese, and scatter on the chicken and tomatoes. Return to the oven and bake 5 to 8 minutes more, until the Mozzarella is melted.
Finish with fresh basil and balsamic glaze. Let cool a few minutes, then slice and enjoy.
