BEAN BROWNIES☕️
You might want to save this recipe for later... the easiest, softest and squishiest brownies with a secret ingredient...
𝚁𝙴𝙲𝙸𝙿𝙴:
☻︎ 1&1/2 cups BLACK BEANS (rinsed and drained)
☻︎ 2 TBSP cacao powder (from
☻︎ 1/2 cup quick oats
☻︎ 1/4 tsp salt
☻︎ 1/3 cup sweetener of choice (add a little more if you like your brownie sweeter)
☻︎ 1/4 cup nuttlex OR coconut oil
☻︎ 2 tsp vanilla
☻︎ 1/2 tsp baking powder
☻︎ 1/2 cup chopped chocolate/choc chips (I used no added sugar dark baking chocolate)

♥︎ Preheat oven on 170 fan forced and prepare a baking dish with baking paper or grease well.
♥︎ Place all of the ingredients (except chocolate chips) in a blender and blitz until completely smooth.
♥︎ stir in chocolate/choc chips and then pour into prepared baking tray.
♥︎ Sprinkle over extra chocolate chips or nuts and seeds.
♥︎ Cook for 15-20 minutes and let cool for at least 10 minutes before cutting.
♥︎ serves about 10 brownie squares. keep in the fridge (if they even last that long..)

I put together a last minute fresh and zesty “build your own lunch” board for my mum on mother’s day.

So.. I met this couple while I was in picking up some goods.
We got chatting and they invited me to a cooking class they were hosting..
Jean’s story is incredible, she has battled with many health issues such a type 2 diabetes, heart disease as well as being vision impaired.
When her health was at its worst she decided to start eating a whole food plant based diet. In doing so her health showed great improvements and she has never looked back.

The cooking demo was so wonderful and I am so happy to have met such inspiring people. I’m super excited to make some of these recipes! 🤤😍

BANANA BLOSSOM FYSH🌸
As Bruce from Finding Nemo said “fish are friends not food”... made with Natures Kitchen Banana Blossom 😍
𝙃𝙊𝙒 𝙏𝙊 𝙔𝙊𝙐 𝘼𝙎𝙆...?
♥︎ Take your banana blossoms and sit them on a paper towel to remove excess moisture while you mix up the marinade. Place the banana blossom in the sauce to marinate in the fridge for as long as possible (minimum 30 minutes)
𝙼𝚊𝚛𝚒𝚗𝚊𝚍𝚎:
- 10ml cocomino FYSH sauce available at
- juice of half a lemon
- 2 tsp dill
- 2 tsp of caper brine or pickle juice
- salt and pepper to taste

♥︎ Prepare vegan “egg wash”
- 1 cup chickpea flour
- 1/2 cup water
- add a little bit of the marinade into the mixture and mix well (add more marinate liquid or water if the mixture is too thick)
♥︎ Once banana blossom has marinated place on a paper towel then dunk into vegan egg wash followed by bread crumbs of choice (I used the Organic Falafel Mix for my flavour packed crumb from 😍)
♥︎ When you have coated all of your banana blossoms, lay them out on a tray and lightly spray with oil.
♥︎ Bake in the oven on 160 for 20 minutes or until golden (flipping them half way through the cooking process)
♥︎ Alternatively you can cook these in the air fryer for 10 minutes on 180 or until golden.
♥︎ serve with some tartare sauce or a squeeze of lemon. CRISPY AND TASTY! 🙌

MESSY BRUNCH 🌞
Today was a glorious day prepping for my cooking demo tomorrow at The Source Traralgon. I had a moment to stop and make a quick bowl of oats to keep me going for the day!
The oats I used from The Source are the creamiest most delicious I’ve had.. get some and thank me later!
*The flavour combo is fresh lemon, blueberries, maple syrup, toasted h**p seeds and chopped dried chrysanthemums 👌

This Sunday at I am presenting my first cooking demonstration and I am so so so excited!
I’ll be sharing a few super simple recipes including this absolutely 𝙙𝙚𝙡𝙞𝙘𝙞𝙤𝙪𝙨 𝙘𝙝𝙤𝙘𝙤𝙡𝙖𝙩𝙚 𝙢𝙤𝙪𝙨𝙨𝙚! (Which I painstakingly had to taste test many times 😂)

𝗣𝗢𝗧𝗔𝗧𝗢 𝗣𝗢𝗥𝗡 😍
For the best, most flavoursome and crispiest potatoes do this:
- Chop potatoes and boil
- Once potatoes are almost cooked drain them and drizzle with olive oil
- Coat potatoes with Organic Falafel Mix (option to add some extra herbs and spices like dried parsley, salt and pepper)
- Bake in the oven for 10-20 minutes until golden.
- For extra crisp, pull them out at the 10 minute mark, lightly spray with olive oil and add an extra sprinkle of falafel mix. For some cheesy goodness sprinkle on some nutritional yeast too. Pop them back in the oven or under the grill to cook for the remaining time until crisp and golden 👌
