It's been 7 years, but I still pinch myself that I get to learn about ceremonial matcha from my Japanese Edosenke teacher, Eiko-sensei. 🍵

It's not my culture, so I've always tried my best to pay respect correctly, well aware of my status as a foreigner looking in. 🙇‍♀️

🗾 Knowing the history, from Japanese historical figures like Oda Nobunaga and Sen no Rikyu enjoying tea.

To the way of living mindfully and according to the seasons. 🌸 (The Head of Edosenke School of Tea is in his 90's, drinks matcha daily and still performing regularly!)

The cultivation and modern day production of camellia sinensis, the tea plant 🌿(I had the pleasure of visiting a working Wazuka-cho tea farm, pre-pandemic.)

And of course, the health benefits and the variety of matcha uses! 😍

The Way of Tea is said to be deep and endless, and I look forward to many more years of study! 🥰

I was craving that fun blend of soft kefir + crunchy muesli 🤤 so I decided to try a new muesli brand! Salted Caramel and Ginger Nut comes out a beautiful golden colour with a great crunch! 🥣

If you like ginger + cinnamon, you'll like this one! ☺️

👋Anyone else love chicken nuggets?

I made amazing GF turkey nuggets at home yesterday, and I was shocked at how crispy and good they were! 🤯

🤫 Healthy GF Turkey Nuggets

😍 INGREDIENTS
500g Turkey mince
8 small Shiitake mushrooms, diced
A good amount of flakey salt + pepper
A shake of sesame oil + seeds
A good dollop of DF Japanese mayo (helps bind the mince!)
Oil spray of choice
GF crumbs

✨ METHOD
- Preheat your oven at 210 degrees
- Place your crumbs into a flat dish to crumb prep
- Mix all other ingredients in a bowl
- Take a spoonful and mould into chicken nugget shapes
- Crumb coat and place on a prepped tray
- Lightly spray the nuggets
- Oven cook for 25 mins
- Check for a crispy brown, if so, turn them over, leave for 10 mins!
🥢 Sprinkle sesame seeds + cut spring onions for prettiness!

😉 FYI: The mushroom helps keeps it moist while the crumb is crisp to bite into.

Stuck in a permanent bad/anxious mood? Try this!

Say out loud 3 things you are grateful for!

I've been practising a gratitude practice alongside one of my clients and I am reminded of how elastic our minds are and how they can be retrained!

Let change this:

😖 I wake up sore and need to stretch but I don't have time.
😫 I am in pain a lot, and I hate it.
😞 I'm scared to talk about my disease because people won't understand me and judge me.

To this:

🌻 I get to wake up and stretch in the mornings, even 5 mins will do!
🌼 I appreciate the signals my body shares with me to let me know I am alive!
🌷 When I need help, I trust and rely on the people I love. I am also strong within myself, I have survived all days even up til now!

There are circumstances we can't change but we can change our viewpoint.

My autoimmune diseases are not the enemy. My body is not the enemy. I am still whole and happy. 💕 And you are too!

I appreciated this so much more when I started cooking at home! 🥰

When you cook for yourself, you learn:

✨ Every single thing that goes on your plate. 😍 No nasty unknown modifiers, flavour enhancers, unnatural preservatives! And for those of you concerned about allergens, no worries!

✨ The fun things about where food comes from - where its grown, what nutrients go inside and its seasonality! When we understand more about our food, we're learning more about our planet too, and making better choices!

✨ How to save money - do you know how much you can save when you cook food yourself? It's amazing how cheap a meal can be! No more $30 plates of easily grilled fish that you could season yourself at home, as well as so many easy snacks!

✨ New skills and knowledge: how to meal prep, how to identify freshness + ripeness, knive and fire skills, recipes from your family and new ones you can make new memories from! (I personally love watching cooking shows to see how passionate people get about good food!)

✨ How to take care of yourself! The act of cooking is an act of love - you are giving a beautiful meal to yourself and like the caption says, it can be simple and delicious.

If I told you living with your autoimmune disease starts with daily habits, would you agree? 🥰

It doesn't have to be hard.
You don't have to wait until the pain is too much. You deserve change and happiness and peace.

"When I am feeling better.." 😬
"When this flareup is done..." 😭
"I'll be ready when..." 😵

Here are my tips:

✨Start with small steps.
✨Imperfect action is okay.
✨Start with one area of your life, not a makeover!

Our diseases are lifelong companions of ours, let's treat them in the same way.

Last year I was a different woman - I'd changed my habits, went cold turkey and started being + and free. 🌻🍎🥦🍵

It'd been hard but I'd been working on self-love and self-belief and once again felt secure in myself (after my diagnosis and remission) that I could finally listen to a tiny wish that had started a few years ago. 😱🤩

In May 2020, I bit the bullet, dropped 💲into a course that was so scary and terrifying to me, but ultimately something I already had rooted in my life, waiting to shoot out from the earth. I signed up at to become a life coach - drawn to helping women who were searching for themselves.🚶‍♀️>🏃‍♀️ >💃!

See, I'd seen other women step into their power, own their skills and potential. For a while, I felt like I wasn't living my life as fully as it could. 😢

Truthfully, for many years, I'd already been assisting friends and partners with improving their lives. 🎉Shifting mindsets, having deep meaningful conversations to open up some they were still holding onto that weren't serving them. 🥰🤯 People asked me how I managed to juggle a myriad of hobbies, become more confident etc. 😘🤭 The truth is I was already on my way to be a coach.

But I wanted to be qualified. So after 6 months of fortnightly calls with our trainers, hours of lectures, self-study, deep diving into my own growth as well as lots of coaching practice - I can now officially say I've graduated and am a fully practicing Autoimmune Support Coach. 🎓🎊😍

As you read this, I'm already supporting and coaching women along their health journey (be it autoimmune or not), reclaiming their bodies, healing their mindsets around themselves, shifting habits, and loving their own wholeness! And I'm so excited to see what the future brings! 🌻🦋🥰
