Hey everyone! You may have noticed I had a break from here but I’m back!

For those of you who are new around here, I’m Lil, a proud homeschooling mum of 2 beautiful girls, lover of whole foods cooking low tox living and essential oils.

Choc almond protein balls… YES PLEASE! 🙋🏽‍♀️🙋🏽‍♀️

120g almonds
60g coconut oil
20g maple syrup
2 tbsp plain protein powder
Dash vanilla extract
Block 85% dark chocolate in chunks
1 tbsp almond or nut butter

Add almonds to thermomix or high powder blender and mill 10 seconds speed 9.

Add all remaining ingredients and mix 3 seconds speed 5, push down sides of bowl and remix 4 seconds speed 5. Roll into balls, mine were 21grams each and the mix made 18.

Who doesn’t want to smell nice 🌹

Miss 5 asked to make her own body oil so she could rub it into her hands and arms to smell nice. Together we chose these loving oils:
- frankincense
- geranium
- patchouli
- juniper berry

Then topped up with fractionated coconut oil.

On the weekend, we celebrated my oldest princess turning 5 🎂

Her main request was a strawberry flavoured cake, so I decided on a two layer cake with strawberry couli in the middle and some couli mixed through the icing.

The first layer was a creation I came up with last year using cashew meal and apple purée and this year I added some vanilla extract and omg it’s delish 👌🏽gluten free doesn’t mean it’s needs to taste yuck or be crumbley. The second layer was the Nigella olive oil cake which I reduced the sugar amount and changed to coconut sugar.

When decorating I like to avoid all artificial colours, so used hopper pink food colouring and ground turmeric for the yellow and some Yum Earth giggles which is like a skiddles alternative.

Add some scattered thyme leaves and eatable flowers from the garden and you have a beautiful cake that is also so moist and delicious, you’ll ask for a second piece.

With the weather cooling down we’re starting to turn to warming soups. This one was delicious 😋

This version of scotch broth uses quinoa instead of barley and I used pre cooked lamb shanks to get the full gut loving benefit from the meat stock.

- Place 2 lamb shanks in a slow cooker and pour over 1.5L boiling hot water, place on high for 4.5 hours or until tender.
- Weigh 150g quinoa into a bowl and cover with water to soak for a few hours
- Pull the meat off the bone and chop into bite sized pieces and strain the meat stock.
- In your thermomix bowl, add 200g chopped onions, 2 garlic cloves, 200g carrot pieces, 200g celery pieces, 350g pumpkin pieces. Chop 5 sec/ speed 4.5 push down sides of bowl and re chop 4 sec/ speed 4.5.
- Add 1 tbsp tallow or olive oil and cook 6 min/ 100/ speed 1.
- Drain and rinse quinoa and then add to Thermomix bowl.
- Add 1 tbsp veg stock paste and 1 tsp salt, pour in 950g strained meat stock and cook 15 min/ 100/ speed 1.
- Add 1 whole broccoli broken into florets and pre chopped lamb shanks and cook 10 min/ 100 / speed 1.
- Serve into bowls and enjoy 🍲

You guys asked for it!

My Easter inspired pumpkin spiced muffins. Made with simple wholefoods these muffins are gluten free, dairy free, soy free.

I whipped up in my thermomix, but you could do in high power blender or pre buy cashew/ almond meal and just mix it all together.

Recipe 👇

- Preheat oven to 180 degrees. Grease silicon muffin tray.
- Place 250 grams Cashews or almonds or a mix into mixing bowl and mill 10 sec/speed 9.
- Add 40 grams Coconut sugar, 200 grams grated pumpkin, 3 eggs, 1 level teaspoons bicarbonate of soda, 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ground clove, 1/4 tsp cardamom, 60g natural sultanas and a dash of apple cider vinegar then mix 10 sec/speed 7. Scrap down sides and mix a further 4 sec/speed 6.
- Pour mixture into prepared muffin tin and then if you want pop a little home made marshmallow into the top.
- Bake for 20-25min or until a skewer comes out clean.

I loveee this cooler weather 🍂 however don’t love the lurgies that come with it 🤧 😷

Our household has been hit with a dreaded cough this week.

It woke me at 4.08am this morning, my oldest just repeatedly coughing. I got out of bed and reached for my ‘chest rub’ and went and rubbed on her chest and upper back and I’m talking within MINUTES the coughing completely stopped, not even a little sympathy cough to rub in my face.

Honestly these oils are a god send 🙏🏼✨

Hands up for chocolate brownies 🙋🏽‍♀️

The sweet potato makes them so moist, and the wholefoods side doesn’t have the excess sugar to make them super sweet.
I used coconut oil instead of butter to make dairy free and opted for a melted dark chocolate with a few dashes of coconut milk for the icing.
