A quick and easy recipe to get your veggie fix ๐ฅฌ Need lunch for tomorrow? Double the recipe to make enough for the next day!
Serves: 4
Ingredients:
- 8 rice paper roll papers
- 1 carrot, thinly sliced
- 1 small cucumber, thinly sliced
- 1 yellow capsicum, thinly sliced
- 1/4 red onion, thinly sliced
- 1 cup mixed salad leaves
- small handful coriander leaves
Dipping Sauce:
- 4 tbs gluten free tamari soy sauce
- 1 tbs lime juice
- 1 tsp sesame oil
- 1 red chilli, finely chopped
- 1 spring onion, finely chopped
Method:
1. Soak the rice paper roll papers according to packet instructions. Place some carrot, cucumber, capsicum, onion, salad leaves and coriander in the middle of them, then roll up to secure.
2. In a small bowl, mix together all of the dipping sauce ingredients.
