A classic - The Lamington
Save and enjoy! 😋

Ingredients:
1 scoop French vanilla protein
1 cup plain flour
1/2 cup buckwheat flour (or just use any flour you have)
1/2 tsp baking powder
Pinch of salt
2 tbsp stevia
2 tbsp caster sugar
1 cup milk of choice
1/3 cup melted coconut oil
Splash of apple cider vinegar

Coating:
1x Lindt Chocolate 70%
2 tbsp melted coconut
1/2 cup desiccated coconut

Filling:
🍓Raspberry or Strawberry Jam

Method:
1. Preheat over to 170 degrees
2. Combine all dry ingredients then create a well in the centre
3. Combine all wet ingredients in seperate bowl
4. Carefully mix in wet ingredients with the dry mix until fully combined. You should have a sticky batter but should have the consistency to move about.
5. Pour batter into square cake tin and bake for 20-25 minutes.
6. Allow cake to cool completely.
7. Melt the chocolate and coconut oil together in medium bowl.
8. Add coconut to seperate bowl
9. Cut the cake in half horizontally so you’re left with two layers.
10. Spread the jam in between the layers and re-join cake together.
11. Cut into desired lamington sizes.
12. Roll the lamingtons into the chocolate, allow them to drip then roll them in the coconut.
13. Place in rack and allow to set.
14. Enjoy your scrummy protein lamingtons!

Is your 2022 not going how you imagined? I FEEL YOU. As much as you hope that you can plan your year out, goal set and work hard to achieve those goals sometimes things just don’t work out the way we plan ☹️👎🏻

I can however re-assure you that at least 1 other person is going through the same thing as you are right now 🙋🏼‍♀️

I hope that this post can remind you to not give up - you don’t have to throw this year away 🙅🏼‍♀️ There is still potential for things to turn around, look up and get better 💪🏼 I’ve been holding on after each challenge this year and things are turning around already 👏🏻 you got this 🥰

Resting is productive

Just like you can’t expect your 2014 Mac Book Pro to keep working when it’s got 23 different tabs open, the fans kicking in and it’s on 5% battery then you can’t expect your body to do the same (in the human version). I’m learning first hand that you will be so much more productive if you take some time to relax (for minutes, hours, days…) and then go back to what you wanted to be doing, you’ll be in a much better place to deal with it 💪🏼

Wishing that you’re all had a good Easter weekend 🤍 I hope that you’ve enjoyed the resting period and have been indulging in food you wouldn’t always eat without the guilt 👏🏻 Occasions like Easter aren’t times to feel anxious about because you feel as though they may hinder your progress. Removing that power from food will give you SO much freedom 🙏🏼

As promised - more recipes! This one is definitely a new favourite in my meal prep rotation for sure! 🤤

𝑆𝑎𝑡𝑎𝑦 𝐶ℎ𝑖𝑐𝑘𝑒𝑛 𝐶𝑢𝑟𝑟𝑦

Ingredients:
☼75g peanut butter
☼500g chicken breast, breasts cut in half
☼1 cup brown basmati rice, uncooked
☼3 spring onions, diced
☼Red curry paste 2 tablespoons
☼1 can coconut milk
☼1 tbsp fish sauce
☼Juice of 1 lime
☼1 tbsp brown sugar
☼Small handful of coriander for garnish
☼Olive oil for frying

Method:
Steam chicken breasts over water on the stove top for 15 minutes on medium heat or until breast is cooked through. Let chicken cool for 5 minutes. Pull apart chicken with forks until chicken is shredded. Set aside

Heat olive oil in a large fry pan. Add onion and curry paste to pan and sear off.

Add coconut cream, peanut butter and fish sauce to the pan and fry on a simmer for 5 minutes or until the sauce thickens.

Meanwhile, cook rice to cooking instructions.

Add lime juice to mix and add chicken to the pan and stir for 1 minute.

Serve chicken on rice and garnish with coriander! Great for freezing 👏🏻
