We love getting out bushwalking on the weekend in the local forests and this time of year has the added bonus of mushrooms! So good at this time of year with the combination of warm and wet weather, the forests are laden with all sorts of goodies!
When last in Europe on pilgrimage we were there for porcini and truffle season - which is very special, but local chantarelles are hard to beat! Chanterelle is the common name of several species of agaricomycetous fungi in the genera Cantharellus, Craterellus, Gomphus and Polyozellus. These fungi are orange, yellow or white, meaty and funnel-shaped. Many species emit a fruity aroma and often have a mildly peppery and delicious taste!
