I’m Catherine, the Bush Dietitian, an Accredited Practicing Dietitian (APD) with a love for food and all things food related. During my studies I developed an interest in eating disorders (ED), allergies/intolerances and paediatrics, so have started training in these areas since graduating at the end of last year and have always had a passion for the Australian bush. I practice from a Health at Every Size (HAES)/weight neutral approach to help you focus on your overall health not just the numbers on the scales. I provide individualised nutritional advice in a weight-inclusive, body positive manner, rather than following restrictive or avoidant behaviours. I currently offer home visits around Brisbane and Sunshine Coast areas or telehealth wherever you are in the country. Outside of dietetics I love cooking especially trying new recipes and experimenting with altering them, arts and crafts, ballet and scouting.

Behind the scenes: Recipe development (with a little Fun Fact Friday)

Oops! That wasn't supposed to happen!

Sometimes recipes don't work out how I think/plan.
Sometimes I mis-time things and under or over cook stuff.
Sometimes I forget to note down how much of different ingredients I use to actually record the recipes when they work (this is my biggest struggle)

Then occasionally, I have days like today where something completely unexpected goes array. I was tweaking a recipe I have made before (and using up some extra ingredients before going away again), all was going well until while blending it, the sauce came out of the base of the blender jug! The base had come a bit lose!

Never fear I was able to save most of the sauce, and finish preparing dinner before I had to leave the house....I just had a bit more mess to clean up first! And although it was a bit frustrating cause I had time constraints, it did give me a chance to have a good (if not slightly confused) laugh.

This is also your reminder that what you see on social media, weather it's people, recipes, events etc, is often NOT the whole picture! So don't judge yourself on the snapshot that others share.

This week I have a really simple smoothie. We call it our breakfast smoothie, but you can have it whenever you want. The oats help make it thicker and more filling as well as adding fibre, however does change the texture if you are used to completely smooth smoothies, so you can start small and increase the amount of oats over time.
The amounts are guides, I find sometimes you need a little more fruit or little more milk depending on the batch of fruit, so just adjust as you feel necessary.

This week I'm sharing a really simple lunch. This is one I find as a good "standby" meal as it is adaptable to what we have on hand (eg this one I used black beans, but could use baked beans, chickpeas or any bean of your choice). It is also one that is super easy to throw together so great when the I have no energy or limited time.
