IT’S SOUP SEASON

Nothing beats soup on a night like tonight.

The first day of winter certainly came with a bang.

This souper (see what I did there😜) easy recipe is literally a bag of vegetable soup mix from the supermarket, a tin of diced tomatoes, some leftover roasted chicken and the pan juices (stock) from last nights dinner. I threw in some dried shiitake mushrooms and the “flavour” from the bag of veggies and some more water till it looked enough, and tadaa…. Dinner to warm the soul.
I had some leftover brown rice too that I just added to my bowl.

I’m not really a smoothie lover.
Or one to use protein powder.

But I have had this protein powder in my cupboard for a couple of weeks now and I thought I would experiment.

What I don’t like about protein powders ~

🌱Plant based powders are often gritty.
🍭Flavored powders are extremely sweet and often leave an aftertaste of the sweetener they use.
🧪Often contain a lot of unnecessary ingredients and flavours.

My smoothie ~

1/2 a banana
1 heaped tablespoon of unflavoured plant based protein powder
1 scoop of whole body collagen
1 teaspoon of almond butter
1 teaspoon of honey
1/2 cup of pear and pomegranate juice
1/2 cup of almond milk
1/4 cup of mixed frozen berries

Wazzed up

Verdict~
It was sweet, as you can imagine.
A bit gritty, but I let it sit for five minutes more and that seemed to help aa bit.
It was tasty. And bonus, it kept me full until 1pm, which was great because I had a really busy morning.
* I did also have two pieces of cheese on toast about 30 minutes before my smoothie.

I will keep experimenting I think.

Simple dinner


Lemon Thyme Chicken

Free range chicken legs (x 9 because that’s how they came)
Juice and zest of one lemon
Two garlic cloves crushed
1-2 tablespoons of fresh thyme leaves.
Celtic sea salt and black pepper.

Put your chicken legs in a baking dish - make sure they are not too crammed together.
Mix all the other ingredients together (except salt and pepper). Spoon over the chicken and season with salt and pepper.

Roast in the oven for an hour to an hour and a half depending on the size of your chicken legs.

We had these with roasted pumpkin and potatoes and steamed broccoli and green beans.

So tasty, and not a processed flavour sachet in sight.

Ahhhhh.

Today I had a moment to play in my veggie garden. It’s been a bit neglected over winter.

It felt so good to dig in the earth and plant some seeds. Just a simple job to help me refocus and reconnect with myself.

And just breathe.

I found these seeds in my seed stash, they are a couple of years old so may not even germinate.

We will see.

What I planted today 🌱

🌱celery tall Utah
🌱heirloom cauliflower mix
🌱red acre cabbage
🌱dwarf blue curled kale
🌱broccoli Di Cicco
🌱snow peas
🌱soy beans
🌱spinach
🌱beetroot
🌱chives

Now I know it’s not the right season for some of these seeds but I’m feeling optimistic.

I’ve mixed them together and scattered them around and now we just wait and see.

Lunch inspiration.

12 minutes to whip up this deliciousness.

Gluten free pasta - cook for 8 minutes.

Fresh herbs from the garden while pasta is cooking - basil, oregano, parsley and spring onions.

Some kale from the freezer.

One tomato chopped.

1/4 cup of tomato passata.

Once the pasta is cooked, drain and set aside.
Add the kale and chopped tomato to the saucepan you cooked the pasta in. Sauté fo a minute, pour in the passata and fresh herbs. Cook for a minute more. Add the pasta back in with a little bit of pasta water. Mix it together, chuck it in a bowl and top with Parmesan cheese.

Done. Eat. Yum.

Potato (91%), canola oil, *wheat* flour, thickeners (1400, 1420, guar gum), salt, corn starch, acidity regulators (450, sodium bicarbonate), rice flour, dextrose (from maize), natural colours (carotene, turmeric).

FOOD FLAVOURINGS

Can be ARTIFICIAL, meaning entirely man made in a lab.

or

NATURAL, meaning they originate from a natural source, but still made in a lab.

Flavours are added back into foods to provide uniformity across a product when its actual flavour is destroyed through processing, regardless of the source of ingredients or the season they are grown.

“Natural flavours” are in a vast majority of processed and ultra-processed foods and are the fourth most common ingredient listed on food labels.

Added flavourings could contain anywhere between 50 to 100 ingredients, with most of these ingredients being emulsifiers, solvents, preservatives, flavour modifiers and other adjuvants. Only 1% of a flavour is actual flavouring ingredients.

Food manufacturers are not required to list all flavour ingredients on a label and can just use umbrella terms like

“NATURAL FLAVOUR”

“ARTIFICIAL FLAVOUR”

or just

“FLAVOUR”.

ARE FOOD FLAVOURINGS HEALTHY?

Typically food flavourings constitute a very small amount of an overall processed food ingredient list, however, some of the processes and ingredients used in the manufacture of food flavourings can lead to endocrine disruption, pesticide exposure, carcinogenesis, heavy metal toxicity, behavioural, developmental, reproductive, and neuro toxicity, and environmental damage.

IS A BANANA FLAVOURED FOOD WITH “NATURAL FLAVOUR” FLAVOURED WITH ACTUAL BANANA?

Not likely, it is more likely a complex of other “natural flavours” that when combined taste like banana. These elements could come from any plant or animal origin.

HOW DO I AVOID FOOD FLAVOURINGS?

🧾 Read your food labels.

⬇️ Minimise processed and ultra-processed foods.

🥦🍓 Eat real food - It comes with its own “natural flavour”.

👩‍🍳 Learn to cook - It’s not difficult to learn how to enhance the natural rich flavours of foods by the way you cook and prepare them.

Not only are they gorgeous, they are also a natural food dye.

In the garden they help to deter root-knot nemotodes, attract beneficial insects to the garden, great companion plants to tomatoes and brassicas, and are super easy to grow.

In the kitchen they add colour to salads, can be used instead of saffron to colour foods.

They are naturally high in lutein, a carotenoid pigment also found in egg yolks, broccoli, spinach, kale, corn, orange capsicum, kiwi fruit, grapes, and zucchini. it has potent antioxidant qualities.

Artificial or natural dyes added to processed foods to enhance or change their colour.

Artificial food colourings are derived from petroleum or synthetically created. These are certified colours and have numbers.

Natural food colourings are derived from spices, vegetables, fruits, plants, animals, and minerals. These are exempt from certification, some have numbers.

Food manufacturers prefer artificial colours as they are more intense, more uniform less expensive, and don’t add unwanted flavour to the end product.

Food colourings must be listed in the ingredients unless they are less than 5% of another ingredient in the food.

AUSTRALIAN FOOD STANDARDS ALLOWS 1️⃣4️⃣ SYNTHETIC FOOD COLOURS AND 2️⃣ “NATURAL” FOOD COLOURS TO BE ADDED TO PROCESSED FOODS.

* Surprisingly this is more than the United States who allow 9️⃣ synthetic food colours.

Here are the 14 synthetic food colours and two “natural” food colours permitted in Australian processed foods ~

1️⃣2️⃣3️⃣ - Amaranth - Synthetic - Bluish red colour - Used in beverages, confectionary, fruit juice, ice cream, jam - BANNED IN THE USA - Potentially hazardous to health 😡😡

1️⃣6️⃣0️⃣🅱️ - Annatto - “Natural” - Yellow to pink colour - Used in beverages, cereals, dairy products, ice cream, icing - Derived from the annatto shrub - Best avoided 😡

1️⃣2️⃣7️⃣ - Erythosine - Synthetic - Cherry pink to red colour - Used in biscuits, canned fruit, cocktail + maraschino + glacé cherries - Potentially hazardous to health 😡😡

To anyone who needs to hear this today.

TO THE WOMAN WHO IS SLOWLY FADING AWAY

To the woman who has lost her spark.
To the woman whose get up and go, has well and truly gone.
This is for you.
This is to remind you, that you don’t have to be everything to everyone, every day.
You didn’t sign up for that.
Remember when you used to laugh? Sing?
Throw caution to the wind?
Remember when you used to forgive yourself more quickly for not always being perfect.
You can get that back again.
You really can.
And that doesn’t have to mean letting people down or walking away.
It just means being kinder to you, feeling brave enough to say no sometimes.
Being brave enough to stop sometimes.
And rest.
It starts the moment you realise that you’re not quite who you used to be.
Some of that is good, some of that is not.
There are parts of you that need to be brought back.
And if anyone in your life is not okay with that… they are not your people. Your people will be glad to see that spark starting to light up again.
So, if you have been slowly fading away my friend, this is the time to start saying yes to things that bring you joy and no to things that don’t.
It’s really pretty simple.

EXTRUSION

In the world of food processing extrusion is the process by which a paste or a soft mix of ingredients (extrudate) is forced though a mould or die to form a shape.

Different pressures, temperatures, moisture levels and ingredients create different end products that are uniform in shape , texture and taste.

👩‍🍳 In the home kitchen this is making pasta in a pasta machine or making cookies in a cookie press, or even piping icing through a piping bag.

IS EXTRUSION HEALTHY?

This is not a simple yes ✅ or no ❌ answer.

It comes down to the ingredients in the final product and whether these ingredients are ultra processed or not.

~ Extrusion can destroy naturally occurring toxins and microorganisms, both good and bad.

~ Vitamin A and the amino acid lysine are destroyed, along with any heat sensitive vitamins, minerals and phytonutrients.

~ Extrusion increases the glycemic index of the foods by increasing the availability of simple carbohydrates for digestion.

~ The process also creates insulin desensitising starches which lead to an increased risk of type two diabetes.

~ Proteins undergo denaturation which can make them easier to digest, but may also reduce their nutritional quality.

WHAT FOODS ARE EXTRUDED?

The extrusion process is used on foods that have a high starch or carbohydrate content - Think anything that is in a shape or puffed.

🥣 Breakfast cereals
🧀 Savoury snacks like cheese rings
🍝 Pasta shapes
🌭 Meat products like luncheon meat or Devon
🍛 Textured vegetable protein
🍬 Chewing gum and liquorice
🥖 Processed cheese sticks and bread sticks

HOW DO I CHOOSE THE RIGHT EXTRUDED FOOD?

> Read your labels

> Look for foods with minimal ingredients and with ingredients you recognise.

> Choose whole grain versions of pastas and cereals.

> Opt for pasta and cereals made with non traditional grains and legumes like amaranth, buckwheat, chickpeas, or lentils. These grain and legume alternatives have a lower glycemic index than regular wheat pasta and cereal.

> Try your hand at making your own pasta at home, you actually don’t need any fancy equipment.

Getting ready to rob the bees.

When we take full frames of honey out of the hives we have to replace them with "empty" frames.

Some of them are cleaned frames from the last rob - all the honey is spun out and the honeycomb structure is left ready to be filled with honey and capped off by the bees.

Some have new wax sheets put in them. The bees have to buld the honeycomb up in these frames before they can fill it with honey.

When we rob the hives before winter, we put more old full frames back in than new waxed frames because the bees don't have the same resources or energy to build too much through winter.

HIGH-FRUCTOSE CORN SYRUP

A very sweet derivative of corn starch.

Corn starch contains chains of glucose, a type of sugar.
🌽
When these glucose chains are broken down into individual molecules corn syrup is formed.
🌽
Enzymes added to corn syrup convert around 55% of the glucose molecules into fructose.
🌽
This creates High Fructose Corn Syrup, a food sweetener added to many processed foods.

IS IT HEALTHY?

High fructose corn syrup is a type of sugar, too much sugar from any dietary source is not beneficial to your health.

Whilst glucose is burnt for energy by your body and processed fairly quickly, fructose heads straight for the liver which triggers the production of triglycerides and cholesterol. This can lead to non-alcoholic fatty liver disease.

Fructose has been shown to cause intestinal permeability, promoting inflammation and an over stimulated immune system.

Studies also show it increases appetite and promotes obesagenic dietary habits.

WHERE IS HIGH FRUCTOSE CORN SYRUP FOUND?

🇦🇺 Very few Australian foods contain high fructose corn syrup, but you will find it in foods imported from American and other countries.
🌎
Other names for high fructose corn syrup include Glucofructose, Isoglucose, and glucose-fructose syrup.

Imported foods that contain High fructose corn syrup~

❌ Soft drinks

❌ Sweetened fruit juices

❌ Processed desserts

❌ Packaged fruits

❌ Crackers

❌ Sauces and salad dressings

❌ Pre-packaged meals

❌ Muesli and muesli bars

❌ Peanut butter and other sandwich spreads

❌ Breads and pastas

❌Breakfast cereals and breakfast pastries (eg. Pop Tarts).

HOW DO I AVOID HIGH FRUCTOSE CORN SYRUP?

~ Read your food labels.

~ Avoid imported foods and avoid the temptation of the novelty “foods”

~ Sugar is hidden in over 80% of processed foods and has over 200 different names.

~ If you are craving something sweet, eat fruit. Yes it also contains fructose, however, because it comes packaged with fibre, vitamins, minerals, and phytonutrients, your body utilises it differently than High Fructose Corn Syrup.

~ Eat real, whole, unprocessed foods.
