This stuffed squash recipe is everything you never knew you needed 👏🏼 The beautiful thing about squash recipes is that squash season lasts from late August all the way through the winter. It's a warming vegetable that is not only comforting, but offers incredible benefits from fiber, antioxidants and a wide range of vitamins and minders. Pair it with the Sage & Salt chicken seasoning that contains hydrating sea salt, sweet, mineral rich Canadian maple sugar and healing herbs such as sage, parsley and
thyme, and you've got an unforgettable meal on your hands!
Ingredients:
• 1 butternut squash
• 11b ground chicken (or turkey)
• ½ cup rice (uncooked)
• 2 cups mushrooms - sliced
• ¼ cup dried cranberries
• 7 large apple - diced
• 4 cups spinach
• 1 onion - diced
• 2 tbsp Sage & Salt Chicken
Seasoning
• ¼ cup goats cheese
• Chives for garnish
Instructions:
• Preheat oven to 425°
• Cook rice according to the
directions on package
• Cut squash lengthwise, scoop out seeds, add 1 tosp oil and bake face down until easily pierced with a
knife
• In the meantime, add chicken and seasoning to an oiled pan and cook
until browned
• Add mushrooms, onion, apple and cranberries. Cook for 7-10
minutes or until soft
• Add spinach and rice and stir to
combine
• Scoop out a few spoonfuls of flesh from squash to make room for the
filling (save for another recipe!)
• Add stuffing to semi-hollowed
squash
• Bake for 10 minutes, top with goats cheese and chives, let cool and enjoy!
