Light and Tender Waffles

2 C water
1-2 dates
1 C quick oats
1/4 C dry millet or cornmeal
1/4 C flaxseed, ground
1/4 C cashews
1/2 t salt

Preheat the waffle iron. Place all ingredients in a high-powered blender and blend until smooth, 45-60 seconds. Pour the mixture into preheated waffle iron and close the lid. Bake until the steam stops rising and the waffle is lightly golden brown and crisp. Note: the time to bake waffles depends on the waffle iron, and may take between 10 and 12 minutes. Once you figure out how long your waffle iron takes, set a timer. Remove to a cooling rack and serve. Do not stack hot waffles on top of each other or they will get soggy. Use a toaster to crisp up, reheat leftovers, or to further bake if you find out the middle didn’t get quite done. Serve with a warm fruit sauce of your choice. Makes 1-1/2 to 2 large regular waffles (6-8 squares). Works well in Belgian waffle irons, too.

I don't have a waffle iron so I made pancakes with this recipe, adding a fruit sauce and a fruit smoothie, so good and filling!!

Cooking Class # 3 - Delicious Breakfasts,
so yummy that they tantalized our taste buds.
We were a small group this time, made some new friends and learned many things about how important breakfast is to our daily health. How we should allow time for our stomachs to digest our food and allow it to rest in between meals.
Increasing my food intake at breakfast with whole foods that are plant-based has stopped my craving to want to eat again before lunch. Now I am able to allow 5-6 hours in between meals for my food to digest and for my stomach to rest from the taxing work of digestion. It has allowed me more time to pursue other interests.

Here's a recipe from the Dessert Class, enjoy!!

Apple Raisin Pie
4 C sliced Delicious, Pink Lady or another flavorful apple
¾ C fresh orange juice
½ C raisins
1/3 C chopped dates
2 T cornstarch or arrowroot
1 ½ T cold water
1 baked piecrust
Cook first 4 ingredients in a saucepan until apples are tender. Mix cornstarch and cold water and
add to saucepan. Cook over low heat, stirring gently until thickened and liquid is clear. Pour
into piecrust and allow to set. May be served hot or cold. Serves 8.

Basic Pie Crust
¾ C brown rice flour
1/3 C almond, sesame or cashew butter
1/3 t salt
3 T water
Mix first 3 ingredients thoroughly. Add water and mix well. Form into a ball and roll between
two layers of plastic wrap. Place in an un-greased 9” pie plate. Prick with fork and bake at 350
degrees until lightly browned, about 10 minutes. Suitable for both sweet and savory fillings.

WOW!!! What a great time we had at our latest cooking class, "Whole Food Plant-Based Desserts". Everything was so yummy!

We had:
- Apple Raisin Pie
- Pumpkin Pudding (which can be a delicious pie as well)
- Whole Food Pie Crust
- Maple Cream and Cashew Cream to put on your pies and
puddings
- Raw Lemon Coconut Squares
- Eatmore Bars
As well as a scrumptious veggie platter and Ranch Style Dressing/Dip.

Everyone had a great time, great discussions and awesome fellowship.

Dog food recipe
I have been asked on many occasions recently for the recipe I use to feed my dog. I used to have an 85 lb Lab mix named Jaguar that was dying at 10 years old and he was the love of my life. I tried every diet the vets recommended for years, which included special kibble for kidney disease, all raw meat diet, cooked meat diet with organ meats, and all sorts. Nothing was working. I was willing to feed him anything that would work. When no diet seemed to be helping and he was getting worse, I figured I had nothing to lose so threw away all kibble dog food, animal products and made him human grade, all organic vegan, people food. I applied my knowledge of human health, kidney disease, and food to my dog. I can’t testify how it might work for your dog because I’m not a vet, but what I can say is my dog, Jaguar, lived healthfully for another 4-1/2 years. His kidney disease from a young pup miraculously disappeared and his mobility returned to like a young pup.
Here’s the recipe I used then and the recipe I use to feed my dog, Midnight, now. All organic, and all seasonings are fresh and aromatic. I have a huge pot that I cook it in, which lasts 3 weeks. I realize dogs are carnivorous but when a carnivorous diet isn’t working one must go to plan B. I’m only sharing my own experience and what worked. Feed at your own risk.
-3 quarts of water
-3 cups of lentils, and swap out for other color lentils, split peas, or mung beans in other batches
-1 C brown rice, and change rice rotation to black, red, basmati, etc
-3 large orange yams, and swap out sweet potatoes, pumpkin, or regular potatoes in other batches
-1 large Costco size bag of frozen Calif mix vegetables
-1 C celery, chopped
-1 C carrots, chopped
-6 T parsley
-3 t oregano
-5 bay leaves
-6 C canned tomatoes, or 2-28-oz cans
-1/4 C olive oil
Place all ingredients except tomatoes, oil, and frozen vegetables in a very large pot and boil until the lentils are soft. About an hour. Add the frozen vegetables and tomatoes. Let it boil for several minutes until the vegetables are tender. Remove from heat, add oil, and let cool. I freeze batches in 6-8 cup size Tupperware and take out one container at a time. After thawed in the frig for a day I whiz it up in a food processor to a lightly chunky texture. She gets 1-1/4 cups lentil soup with one cup kibble twice a day. I’m weaning her off the kibble. I also supplemented Jaguar’s diet and Midnight’s diet now with raw and cooked carrots, all vegetables, peas, avocados, apples, bananas, and all fruit and all raw nuts and seeds. She love Brazil nuts, almonds, peanuts, etc. I also change out the lentils for other easier to digest beans. She loves it all, just like Jaguar did. Dogs should not get salt. I never give my dogs gluten. Dogs don’t do well with onions and some don't tolerate garlic. I make all soups so it appeals to their smell and the aroma is delicious. I change out ingredients so they get a wide variety of foods. Let me know how your dog likes it.

Crackers are a great replacement for unhealthful breads. Here’s a great cracker recipe. Enjoy!

Mung Bean Crackers

2 C cooked sprouted mung beans
2 C dry buckwheat, soaked and sprouted
1 C sunflower seeds, soaked and sprouted
1 tsp salt
Process all ingredients. Spread over paraflex paper on dehydrator sheet into a thin layer. Dehydrate for about 18 hours at 109 F until completely dry. Enjoy. Freezes well.

I have been at Years Restored Lifestyle Center near Sacramento, Calif for the past week and it has been the best of time, and a great time of learning. We have just completed 5 days of insense detox, and dinner this afternoon was our first meal since we started. Dinner never tasted so good…. stuffed avocados, large salad, and raw crackers made from coconut and mung beans. Janie
