Baked Avocado with Eggs, Chorizo and a side of Guac 🥑

This recipe is perfect for those days when you want to level up your breakfast! Packed with tons of protein and healthy fats to keep you satisfied and energized 👍🏼

We hope you enjoy it!

servings: 2

prepping time: 10 min

cooking time: 20 min

Ingredients

1 large avocado
2 eggs
1/2 chorizo sausage
1/2 medium tomato
1 green onion
1/4 lime juiced
2 tbsp chopped cilantro
olive oil
S&P
olive oil
chopped chives for garnish

Directions

Preheat oven to 450F
Remove sausage from the casing. Heat a frying pan over medium high.
Add sausage and break it up into small bits using a wooden spatula.
Cook until browned all around, 3-5 min.
Set aside half the the avocado lengthwise and remove the pit.
Using a spoon, scoop out the flesh leaving about a 1/2 in boarder around*.
The hollow should be large enough to fit an egg. Set the scooped out avocado flesh aside.
Place the avocados into an oven proof dish, cut side up** Break the eggs into the hollow and top with cooked chorizo.
Bake until the egg whites are set, about 15 min
While the avocado bakes, chop the tomato, spring onions, and cilantro.
Combine the remaining avocado flesh, tomatoes, spring onions, cilantro, lime juice, and olive oil.
Salt to taste and mix well. Set aside.
Garnish the avocados with some chopped chives and serve with the guac on the side. Enjoy!

Notes:

*Try to choose large avocados so the eggs easily fit in. Make the hollows shallow - the eggs will cook through more evenly.

**If your avocado halves do not stay upright, before you add the eggs, make small nests using strips of tin foil. Roll and squish the foil into a tube and close the two ends together into a ring. Place the avocados in the middle for more stability. Alternatively, you can use small and shallow oven proof bowls

It’s been 2 years!

I took a chance ( hope it’s the right decision).

This is where I come to recharge, you see at first while we were in lockdown I was doing okay.

Like you as the days, nights, weeks and months went by it paid a toll on me.

Trying to do the right things to keep myself and my family safe.

At first I was eating all the good things, working out staying positive. Then slowly I stopped working out. I started feeling like what’s the point. Ate what ever I wanted!!

Tell me I’m not alone!!!

I gain weight not just a little a lot!!

That’s when I started to sit and sit and sit. Somedays I only had 300 steps a day!!!

Well I found out the hard way why it’s important to move and eat well 🤦‍♀️

I started have back issues, then hip and legs!
I have been going to physo twice a week for a couple of months trying to get feeling well enough to start moving again.

Healthy body just isn’t working out and nutrition it’s mental, it’s how you feel.

It should be your Job 1 to take care of you! Move a little, eat a little healthier, do something that puts a smile on your face and what makes your heart happy!!

I have a question can you pick 3 things for yourself this week to change, add or do what make you happy?

Could be to drink more water, get up and move, read a book listen to a podcast what ever you think of!

Let’s do “3 for me” this week together!

Mine is move a little more, 🏃‍♀️drink more water 💧and try not to stress 🥺about things.

I swear the chef in me comes out at the grocery store.

Especially after binge watching the Food Channel!

Who can relate?

This week I bought veggies and when I went to use them they were all shrivelled up. Well maybe I didn’t buy them this week lol

A friend told me when she makes soup she buys a veggie tray to use for the soup. She also uses a precooked whole chicken. That you buy from the grocery store.

So no wasted veggies or meat.

That idea is such a time saver, I’m going to use it 😀

There's a huge difference between being "burnt out" and feeling “stuck.”

Feeling stuck is a signal from your body, mind and spirit. The same way hunger or thirst is a signal. It means you need something. When you’re stuck you need personal growth. Your life has gotten boring, stagnant, or predictable.

So if you’re feeling stuck, a new experience, a new class, or re-engaging in a project that interests you will help you start growing again.

Burn out happens when you've had relentless demands or never-ending pressure put on you. Your nervous system is taxed and on edge. You feel disengaged and uninspired. You start to feel uninterested in things that normally bring you joy. You feel like you might collapse if one more thing happens unexpectedly or gets added to your plate (this has been for me for the past year).

If you’re feeling like you’re just a burnt piece of toast, the only solution is to take a break. Ask for time off or a reduced schedule or if burnt out is from your personal life, ask your friends and family for some help. You can’t go on like this. Taking a break isn’t a reward. It’s your right. If there was ever a time to find the courage to ask for time off or to take it - it’s right now.

You are a happy, passionate and confident person at your core. Give yourself a break to reset or to start growing in new ways again. It’s the only way to get reconnected to yourself again ❤️

Asparagus Stuffed Salmon Rolls with Lemon Sauce 😋💗

Ingredients:
4 (5 ounce) salmon fillets, skins removed
salt and pepper to taste
1 (12 ounce) container ricotta
1/2 cup parmigiano reggiano (parmesan), grated
2 tablespoons basil, chopped
2 teaspoons lemon zest
salt and pepper to taste
1/2 pound asparagus, trimmed
1 tablespoon butter
1/2 cup chicken broth
2 tablespoons lemon juice
2 teaspoons cornstarch

Instructions:
Season the salmon fillets with salt and pepper to taste, lay them down with the skin side up, top with the mixture of the ricotta, parmesan, basil, lemon zest, salt and pepper, several spears of asparagus and roll them up before placing them on a grease baking sheet with the seam side down. Bake in a preheated 425F/220C oven until the salmon is just cooked, about 15-20 minutes. Meanwhile, melt the butter in a small sauce pan over medium heat, add the mixture of the broth, lemon juice and corn starch and heat until it thickens, about 3-5 minutes. Serve the salmon rolls topped with the lemon sauce and optionally garnish with more basil and lemon zest.

All dishes approximately 500 CALORIES


🍣SALMON🍣
with hasselback potatoes.
HOW TO MAKE THE PERFECT CRISPY SALMON:
Honey garlic chipotle salmon 1) combine 1 tbsp honey, 1/4 tsp. chipotle chili powder, 1 tbsp. melted butter, s+p. Spread over two 4-6 oz. fillets 2) in a pan, heat 1 tsp oil; add salmon, skin side up, and sear for 3 mins; flip, and cook an additional 3-4 mins •• crispy garlic-parmesan hasselback potato •• grilled asparagus w/ parmesan and red pepper.


🍗CHICKEN🍗
mac n’ cheese
(the coziest of cozy comfort food, am I right?), paired it with cast iron-cooked lemon-honey-garlic-sage chicken + grilled broccolini for a noodle night done right 💯☺️ macaroni & cheese •• lemon honey garlic sage chicken 🌿🍋 •• grilled broccoli parmesan & red pepper 🥦

The juuuicest seared garlic ghee scallops
Seared in butter with lots of extra garlic👌🏻
Season with garlic salt; in a pan, heat 1 tsp. avocado oil + 1 tsp. garlic ghee; add scallops + sear until lightly brown; flip and sear other side 2 mins •• grilled asparagus w/ parmesan •• garlic-sage fettuccine (toss fettuccine in olive oil, basil, sage, garlic, and parmesan).

buttery avo toast and 2 eggs
