🥗Looking for a delicious, nutritious, low-calorie dish? Try my tasty spring rolls with fresh veggies! 🥗

Ingredients:

Wraps:
- 4 rice wraps
- Warm water (for soaking)

Filling:
- Sprouts
- Cabbage, shredded
- Carrots, shredded
- Fresh mint leaves
- Arugula or choice of leafy greens
- Choice of protein (shrimp, salmon, or tempeh)
- Rice noodles, cooked
- Red and orange bell pepper slices
- Cucumber, julienned
- Pickled ginger
-Roasted crushed almonds

Dipping Sauce:
- 1/4 cup sesame oil
- 3 tablespoons rice wine vinegar
- 3 tablespoons tamari
- 1 clove garlic, minced
- 1 teaspoon ground ginger
- Maple syrup to taste
- 2 tablespoons almond butter

🌿Instructions:

Preparing the Wraps:
1. Soak the Rice Wraps:
- Fill a shallow dish or bowl with warm water.
- Soak each rice wrap in the warm water for about 15-20 seconds on each side until pliable.
- Lay the first wrap on a large chopping block, starting at the top left corner.
- Overlap the second wrap to the right of the first wrap.
- Place the third wrap to the left, overlapping the first wrap.
- Finally, place the fourth wrap on the bottom right, overlapping the second and third wraps. This will create a larger wrap surface using four wraps.

2. Assembling the Filling:
- Place a small amount of each filling ingredient (sprouts, cabbage, carrots, mint, arugula or leafy greens, chosen protein, rice noodles, bell pepper slices, cucumber, and pickled ginger) in the center (side to side) of the prepared rice wraps.

3. Rolling the Wraps:
- Fold the sides of the wraps over the filling.
- Roll the wraps tightly from the bottom to the top, ensuring all the filling is enclosed.
- Once rolled, cut the large wrap into three equal sections, creating three approx. 4-inch wraps.

4. Preparing the Sauce:
- In a small blender, combine sesame oil, rice wine vinegar, tamari, minced garlic, ground ginger, maple syrup, and almond butter until smooth and well blended.

Serve the spring rolls with the dipping sauce on the side and enjoy!
