Sundried Tomato Pasta đâ¨
This pasta is rich, flavour-packed, and so easy to make. I had a version of this at a hotel years ago and knew I had to recreate it at home â and it did not disappoint. Creamy, fresh, and a little addictive⌠youâll definitely be going back for seconds đ

Ingredients
⢠8â10 garlic cloves
⢠1 tbsp salt
⢠Handful of fresh basil
⢠2 jars sliced sundried tomatoes in oil (drained)
⢠1 tbsp white vinegar
⢠â
cup olive oil (add more if needed for smoothness)
⢠½ cup shredded Parmesan (divided)
⢠1 tbsp dried basil
⢠2 packs rotini pasta
⢠1 ball mozzarella, cubed
⢠1 pint cherry tomatoes
⢠½ cup sliced or pitted black olives
Method
1ď¸âŁ In a bowl, combine garlic, salt, half the fresh basil, 1 jar sundried tomatoes, vinegar, olive oil, half the Parmesan, and dried basil. Blend until smooth.
2ď¸âŁ Boil pasta according to package directions.
3ď¸âŁ Drain pasta and mix in the sundried tomato sauce.
4ď¸âŁ Add cherry tomatoes, olives, remaining sundried tomatoes, fresh basil (chopped), and mozzarella. Mix well.
5ď¸âŁ Top with remaining Parmesan and serve warm.
Optional: serve with grilled or roasted chicken on the side đ¤
