Sundried Tomato Pasta 🍝✨
This pasta is rich, flavour-packed, and so easy to make. I had a version of this at a hotel years ago and knew I had to recreate it at home — and it did not disappoint. Creamy, fresh, and a little addictive… you’ll definitely be going back for seconds 😍

Ingredients
• 8–10 garlic cloves
• 1 tbsp salt
• Handful of fresh basil
• 2 jars sliced sundried tomatoes in oil (drained)
• 1 tbsp white vinegar
• ⅓ cup olive oil (add more if needed for smoothness)
• ½ cup shredded Parmesan (divided)
• 1 tbsp dried basil
• 2 packs rotini pasta
• 1 ball mozzarella, cubed
• 1 pint cherry tomatoes
• ½ cup sliced or pitted black olives
Method
1️⃣ In a bowl, combine garlic, salt, half the fresh basil, 1 jar sundried tomatoes, vinegar, olive oil, half the Parmesan, and dried basil. Blend until smooth.
2️⃣ Boil pasta according to package directions.
3️⃣ Drain pasta and mix in the sundried tomato sauce.
4️⃣ Add cherry tomatoes, olives, remaining sundried tomatoes, fresh basil (chopped), and mozzarella. Mix well.
5️⃣ Top with remaining Parmesan and serve warm.
Optional: serve with grilled or roasted chicken on the side 🤍
