Sundried Tomato Pasta 🍝✨

This pasta is rich, flavour-packed, and so easy to make. I had a version of this at a hotel years ago and knew I had to recreate it at home — and it did not disappoint. Creamy, fresh, and a little addictive… you’ll definitely be going back for seconds 😍

Ingredients
• 8–10 garlic cloves
• 1 tbsp salt
• Handful of fresh basil
• 2 jars sliced sundried tomatoes in oil (drained)
• 1 tbsp white vinegar
• ⅓ cup olive oil (add more if needed for smoothness)
• ½ cup shredded Parmesan (divided)
• 1 tbsp dried basil
• 2 packs rotini pasta
• 1 ball mozzarella, cubed
• 1 pint cherry tomatoes
• ½ cup sliced or pitted black olives

Method
1️⃣ In a bowl, combine garlic, salt, half the fresh basil, 1 jar sundried tomatoes, vinegar, olive oil, half the Parmesan, and dried basil. Blend until smooth.
2️⃣ Boil pasta according to package directions.
3️⃣ Drain pasta and mix in the sundried tomato sauce.
4️⃣ Add cherry tomatoes, olives, remaining sundried tomatoes, fresh basil (chopped), and mozzarella. Mix well.
5️⃣ Top with remaining Parmesan and serve warm.

Optional: serve with grilled or roasted chicken on the side 🤍

Alhamdulillah for 2025.
A year filled with work, movement, family, kids’ sports, and memories made. A reminder that our bodies are a trust we’ve been given, and caring for them through movement, nourishment, and rest is part of how we live out our faith.

The Qur’an reminds us to slow down, be present, and stay grateful — because life moves quickly and passes in the blink of an eye. When we reconnect with God and take care of ourselves, we’re able to show up stronger for our families and our purpose.

So grateful for every blessing, and especially for the clients I had the honor of walking alongside this year.

✨ 42 Today 🤍

Another year around the sun, another year of lessons, softness, strength, and surrender. If I’ve learned anything, it’s that life gets lighter when you stop rushing, stop proving, and start being — fully, honestly, and with God at the center.

42 taught me that peace is a practice, faith is an anchor, motherhood is the greatest teacher, and the body you live in deserves your love daily, not just when it performs perfectly. It taught me that letting go is a skill, boundaries are love, and the people meant for you will feel like calm, not urgency.

That small habits matter more than grand moments, mornings shape the day, and gratitude truly shifts the heart. Here’s to more presence, more softness, deeper faith, louder joy, and choosing what feels aligned and true. To loving my people deeply, my body kindly, and my life humbly.

Ending November with a full heart 🤍
It was a month of family time whenever possible, long days at gyms and tournaments, living on the road, and holding tight to the routines that keep me grounded — my movement and my Quran.

A lot of coffee, a lot of driving, a lot of juggling… and a lot of gratitude.
Alhamdulillah for the blessings in the chaos.

Now we step into December — the last chapter of the year. Let’s show up with intention, discipline, and faith. Let’s finish the year STRONG. ✨
