Kale is a power-house green. It’s full of nutrients like vitamins A, K, and C, and more. Adding it to a salad is an easy way to boost the nutritional value of any side dish. This kale salad recipe uses Lemon essential oil and Marjoram essential oil to create a light and flavorful vinaigrette that combines perfectly with the sweet and crunchy additions of sliced apples, dates, and almonds. Aside from tasting good and including awesome ingredients, you can throw it together in minutes—a huge plus as far as I'm concerned!☺️
Enjoy!

Ingredients
2 tablespoons extra-virgin olive oil
1 bunch kale
1 Honeycrisp apple, sliced into thin matchsticks
¼ cup dates, roughly chopped
¼ cup toasted, slivered almonds
¼ cup Pecorino cheese, finely grated
4 drops Lemon essential oil
1 drop Marjoram essential oil
Freshly ground black pepper and kosher salt to taste

Instructions
Prepare the kale by removing the ribs from the leaves and slicing the leaves into thin ribbons. Toss the kale into a large bowl, drizzle with a small amount of olive oil, and massage with your hands until the leaves are soft.
In a separate bowl, add the Lemon essential oil, Marjoram essential oil, olive oil, and salt and pepper. Whisk until emulsified for a light, flavorful vinaigrette.
Pour the vinaigrette over the kale and toss to coat. Set aside.
Add the apples, dates, almonds, and cheese to the kale.
Season with additional salt and pepper to taste, and toss well before enjoying.

Did you know.....

Between 8% and 14% of adults will experience a stomach ulcer during their lifetime. Some factors that contribute to these ulcers include alcohol consumption, NSAID use, and the presence of the bacterium H. pylori. A preclinical stomach ulcer model found that oral administration of lemon essential oil or its primary constituent limonene prevented stomach ulcers caused by alcohol (100%), indomethacin, and inhibited H. pylori, suggesting they are promising options to maintain the integrity of the stomach lining.

Bed bugs are becoming more common these days.
A friend of mine stayed in a hotel and found out the room had bed bugs! Luckily he found out before going home.
