🥞Fluffy Yogurt Pancakes🥞

I tried this new recipe, it was delicious and so comforting 🤤😍

Ingredients for 6 medium-size pancakes :
2 eggs 🥚
150 grams of flour 🌾
250 grams of greek yogurt (I used lactose-free greek yogurt)
1 teaspoon of coconut sugar 🥥 (you can use any type of sweetener you like 😋)
2 tablespoons of canola oil
1 teaspoon of baking powder
1 pinch of salt 🧂

Combine and mix all the ingredients together until you have a smooth batter. If it’s too thick you can add 1 or 2 extra tablespoons of yogurt and/or canola oil. Wait 10 minutes for the batter to relax.

Then, heat a pan to medium heat. Add a bit of canola oil to the pan for it to not stick. Pour a cup of batter onto the pan, and cook for 1 minute on each side until golden and a bit soft inside. Make sure to flip the pancakes when it makes bubbles on one side.

Once cooked, add your favorite toppings: maple syrup, honey, jam, fresh fruits, melted chocolate, cream cheese... 🤤 (sweet but worth it) 😇

*One pancake’s weight = 70-100 grams
I guessed it’s around approx 35 to 50 grams of carbs per pancake.

It’s been 5 years now that I am a type 1 diabetic and I can’t believe the outreach and support this community has shown me over, I am so proud ! 😇

Who would win? My Rate or This Mega Pizza 😂🍕

What can I say, I love pizza! Don’t worry tho, I didn’t eat it all. (even though I wish I could) 😍

It’s always a challenge to eat a lot of carbs and manage your rate. 🤨
But, I always remind myself that it's okay to eat what you love, and sometimes you have to enjoy the moment! 🥰

Here are some tips I can give you to make sure you manage your rate when eating a lot of carbs :
- Check your rate before eating.
- Take insulin in advance before eating (≈15min), so the insulin can counteract the carbs in time.
- You can divide your insulin doses, especially if you want to have more food.

Last tip :
- Enjoy the food and if you hypo, remember it's okay. 😋

Managing Type 1 in Canadian winters is not easy, even after five years of practice 😅

My rate is very sensitive to the weather, and I always low when I walk in the cold. But this weekend, I could not resist taking a long walk in the snow! 😍☀️❄️

I try my best to enjoy the winter weather and still manage my rate. I find that leaving my house at a slightly higher rate than usual and having lots of snacks helps me avoid hypos 😇

😋 Sugars with low glycemic index 😋
I've been paying more attention to the different types of sugar and their glycemic index.
Sugars impact our rate a lot in our everyday life and if we can make it easier on us, why not find some alternatives. 😊
It is always important to look at the carbs amount to regulate our rate and make sure we stay in range.
I've been using coconut sugar while cooking, and it does help my rate to stay in range. 🥥
Here are some sugars with low glycemic index (how slowly or how quickly those foods cause increases in blood glucose levels) :
- coconut sugar GI= 50 🥥
- agave syrup GI=19 and fewer calories 3 calories per 1g 🌿
- maple syrup GI=54 🍁
- honey GI=50 🍯
- stevia, great sweetening power and no impact on our rate 🌱
