For our Peanut Peanut cookie, everything starts with the peanuts themselves.
The signature “double peanut” name comes from our recipe:
peanut butter + whole crispy peanuts we roast in-house, folded into the dough for richness, warmth, and crunch in every bite.
We use raw peanuts packed sous-vide, a method that protects their natural oils from oxidation long before they reach our kitchen. Cleaner fats, fresher aroma, and a deeper, warmer peanut flavour.
Most people don’t know this, but peanut aroma comes from heat-sensitive volatile compounds that fade quickly once roasted. That’s why we roast our peanuts fresh, in-house, in small batches to capture the full, bright aroma you simply can’t get from pre-roasted nuts. Gentle roasting also helps preserve resveratrol, a natural antioxidant found in raw peanuts.
