I had guests coming over with only 45 mins to put a balanced, healthy meal together. Luckily, I was easily able to follow this simple formula:
1. Lightly sprinkle with olive oil and spices one pan of veggies to roast
2. Lightly season choice of protein to roast
3. Put wild rice, quinoa or beans to cook
4. Chop fresh vegetables for salsa or salad as topping

Voila! Beautiful and delicious!!!
