Many people believe that eating more plant-based foods is time-consuming and difficult.

It can be but it doesn't need to be.

Last weekend, I had the privilege of attending some lectures by Dr. Michael Klaper. Dr. Klaper has been a champion of whole foods plant-based eating for decades.

He currently teaches nutrition to medical students in the hopes of shifting our healthcare system from one of treatment to one of prevention.

Dr. Klaper talked about how whole foods plant-based eating is beneficial for not only our health, but for the health of the planet.

He described the earth like one of his patients with "temperature elevated", "digestive power of soil diminished", "circulation of rivers-clogged and polluted" and respiration failing from deforestation".

He also discussed that humans do not need to rely on animals to nourish our bodies.

Although he is vegan, he encourages everyone to make any shift they can towards whole foods plant-based eating for health of ourselves and the planet.

Remember, as individuals we can contribute towards making a difference.

Lentils are a good source of plant-based protein.
