🛒 Ingredients

1 boneless chicken breast

4 boneless chicken thighs
Or use 3 breasts, or any combo you like!

1 tbsp vegetable oil

1 medium onion, chopped

1 tsp chili powder

½ tsp smoked paprika

¼ tsp cumin

½ tsp black pepper

8 oz salsa (mild, medium, or hot)

10.5 oz can cream of chicken soup

2 cups cooked rice

8 oz shredded sharp cheddar cheese

Tortilla chips

🍲 Instructions

1️⃣ Cut chicken into bite-size pieces.
2️⃣ Heat oil in a skillet over medium-high. Add chicken and cook until almost done.
3️⃣ Add chopped onion and continue cooking until tender.
4️⃣ Reduce heat to medium and stir in:

Chili powder

Smoked paprika

Cumin

Black pepper

Salsa

Cream of chicken soup

Cooked rice
5️⃣ Mix well, then add ¾ of the cheddar cheese.
6️⃣ Pour into a lightly greased casserole dish (9x10 works great).
7️⃣ Crush 3–4 handfuls of tortilla chips over the top and sprinkle with the remaining cheese.
8️⃣ Bake at 350°F for 20–25 minutes, or until hot and bubbly.

These cookie bars are everything you love in a classic chocolate chip cookie—thick, chewy, buttery—but upgraded with M&M’s, chocolate chips & peanut butter chips. Perfect for parties, lunchbox treats, or a late-night sweet tooth fix! 😍

🍫 Ingredients (Makes 24 Bars)

2 ¼ cups flour

1 tsp salt

½ tsp baking soda

12 tbsp butter, melted & cooled

1 cup brown sugar

½ cup white sugar

2 eggs

2 tsp vanilla extract

1 ¼ cups M&M candies, divided

¾ cup chocolate chips, divided

¾ cup peanut butter chips, divided

2 tsp sea salt (optional)

👩‍🍳 Instructions

1️⃣ Preheat oven to 350°F. Line a 9×13" pan with parchment or spray with nonstick spray.
2️⃣ In a bowl, whisk together flour, salt, and baking soda.
3️⃣ In a large bowl or stand mixer, cream melted butter, brown sugar & white sugar until fluffy.
4️⃣ Add eggs one at a time, mixing well, then stir in vanilla.
5️⃣ Slowly add dry ingredients until just combined.
6️⃣ Fold in:

1 cup M&M’s

½ cup chocolate chips

½ cup peanut butter chips
7️⃣ Press dough evenly into the prepared pan.

3 medium ears fresh corn, cut into thirds

1 lb medium red potatoes, quartered

1 cup baby carrots

1 large green pepper, cut in 1-inch pieces

1 large sweet red pepper, cut in 1-inch pieces

(Optional: ANY other veggies you want!)

1 envelope onion soup mix

3 Tbsp fresh basil (or 1 Tbsp dried)

1 Tbsp olive oil

¼ tsp pepper

1 Tbsp butter

Italian seasoning (optional but delicious!)

👩‍🍳 How to Make It

1️⃣ In a large bowl, combine all the veggies, onion soup mix, basil, olive oil, and pepper.
2️⃣ Toss well to coat everything evenly.

½ cup butter or margarine

1 cup flour

1 cup sugar

1 tsp baking powder

1 cup milk

2 cups pitted cherries (fresh or frozen)

¾ cup sugar

1 tbsp flour

👩‍🍳 Instructions

1️⃣ Preheat Oven
Set oven to 350°F. Place butter in a 9x13 baking dish and melt it in the oven (about 5 minutes). Remove once melted.

2️⃣ Make the Batter
In a bowl, mix 1 cup flour, 1 cup sugar, and baking powder.
Stir in the milk until smooth.
Pour batter over the melted butter — do NOT stir.

3️⃣ Prepare the Cherries

25 jalapeños

1 (8 oz) Philadelphia low-fat cream cheese

2 tbsp McCormick Bac’n Pieces

1 box Hormel Fully Cooked Bacon

1 (8 oz) bag Kraft Mexican Four Cheese

Pinch of salt

Pinch of pepper

1 (6 oz) can crab meat (shelf-stable near the tuna)

👩‍🍳 Directions

1️⃣ Prep the Peppers
Cut all jalapeños in half and remove seeds.
Boil them for 45 minutes — the longer they boil, the milder they become.

2️⃣ Make the Filling
In a bowl, mix together:
• Cream cheese
• Bacon bits
• Crab meat
• Salt & pepper
• Half the bag of shredded cheese

3️⃣ Stuff the Jalapeños
Drain boiled peppers and let cool.
Spoon in your cream cheese mixture.

4️⃣ Top Them Off

These Chicken Bombs are juicy, cheesy, smoky, spicy, and wrapped in BACON.
Basically… a flavor explosion. 💥😋

🛒 Ingredients

5 boneless, skinless chicken breasts (makes ~10 bombs)

5 jalapeños, sliced lengthwise & cleaned

20 slices bacon

4 oz cream cheese, softened

1 cup Colby Jack or cheddar cheese, shredded

Salt & pepper to taste

1 cup BBQ sauce (Sweet Baby Ray’s recommended)

👩‍🍳 Directions

1️⃣ Prep the Chicken
Slice each chicken breast in half horizontally (like a bun). Pound to ¼" thickness. Season with salt & pepper.

2️⃣ Stuff the Peppers
Mix cream cheese + shredded cheese. Spread ~1 tbsp into each pepper half.

3️⃣ Assemble the Bombs
Place each filled pepper cheese-side down on a chicken piece and wrap tightly.
Wrap each chicken bundle with two slices of bacon, fully covering it.

4️⃣ Grill Method (Best flavor!)
Preheat grill to 350°F (indirect heat).
Cook 30 minutes, turning every 5 minutes and basting with BBQ sauce each turn.

5️⃣ Oven Method
Bake at 400°F for 20 minutes (no sauce yet) to help crisp the bacon. Flip once.
Reduce heat to 375°F, drain excess fat, coat with BBQ sauce, and bake until chicken is cooked.

2 eggs

1 tsp vanilla extract

2 cups unsweetened applesauce

1 banana, mashed

6 packets Sweetleaf Stevia or 1½ tsp stevia powder or ½ cup honey

5 cups old-fashioned rolled oats

¼ cup flaxseed meal

1 tbsp ground cinnamon

3 tsp baking powder

1 tsp salt

2¾ cups milk

Optional: raisins, walnuts, chocolate chips, fresh/frozen fruit

👩‍🍳 Instructions

1️⃣ Preheat oven to 350°F.
2️⃣ In a bowl, mix eggs, vanilla, applesauce, banana, and stevia/honey.
3️⃣ Add oats, flax, cinnamon, baking powder, and salt. Stir well.
4️⃣ Pour in milk and combine thoroughly.

🛒 Ingredients
Pork

1 1/5 lb lean pork tenderloin

1 tbsp extra virgin olive oil

1 tsp brown sugar

1 tsp paprika

1 tsp cumin

1 tsp chili powder

1 tsp salt

1 tsp pepper

Veggies

3 carrots, peeled & chopped

3–4 parsnips, peeled & chopped

1 lb baby potatoes, quartered

1 sweet potato, peeled & chopped

1 cup butternut squash, chopped

1 tsp apple cider vinegar

8 sage leaves, roughly chopped

1 tsp salt

1 tsp pepper

Glaze

2 tbsp butter

¼ cup maple syrup

2 tbsp balsamic vinegar

🔥 Instructions

1️⃣ Preheat oven to 375°F and spray a large casserole dish with nonstick spray.
2️⃣ Place pork tenderloin in the center of the dish and rub with olive oil.
3️⃣ In a small bowl, mix brown sugar, paprika, cumin, chili powder, salt & pepper.
4️⃣ Rub seasoning mix all over the pork.
5️⃣ Add all chopped veggies around the pork.
6️⃣ In the same bowl, mix apple cider vinegar, sage, salt & pepper.
7️⃣ Pour over veggies and toss to coat evenly.
8️⃣ Place dish in the oven.
9️⃣ Meanwhile, melt butter in a small saucepan. Whisk in maple syrup and balsamic vinegar to create the glaze.
🔟 After 15 minutes, flip the pork, toss veggies, and baste everything with the glaze.
1️⃣1️⃣ Return to the oven for 5–10 more minutes or until pork reaches 140°F internal temp.
1️⃣2️⃣ Remove, baste again, slice, and serve with extra glaze.
