🇲🇽🔥 Mexican Chicken Casserole

If you love a cozy casserole with big Mexican-inspired flavors, this one will be on repeat in your kitchen. It’s creamy, cheesy, crunchy, and packed with chicken + salsa goodness! 🌶️🧀🇲🇽
🛒 Ingredients
1 boneless chicken breast
4 boneless chicken thighs
Or use 3 breasts, or any combo you like!
1 tbsp vegetable oil
1 medium onion, chopped
1 tsp chili powder
½ tsp smoked paprika
¼ tsp cumin
½ tsp black pepper
8 oz salsa (mild, medium, or hot)
10.5 oz can cream of chicken soup
2 cups cooked rice
8 oz shredded sharp cheddar cheese
Tortilla chips
🍲 Instructions
1️⃣ Cut chicken into bite-size pieces.
2️⃣ Heat oil in a skillet over medium-high. Add chicken and cook until almost done.
3️⃣ Add chopped onion and continue cooking until tender.
4️⃣ Reduce heat to medium and stir in:
Chili powder
Smoked paprika
Cumin
Black pepper
Salsa
Cream of chicken soup
Cooked rice
5️⃣ Mix well, then add ¾ of the cheddar cheese.
6️⃣ Pour into a lightly greased casserole dish (9x10 works great).
7️⃣ Crush 3–4 handfuls of tortilla chips over the top and sprinkle with the remaining cheese.
8️⃣ Bake at 350°F for 20–25 minutes, or until hot and bubbly.
9️⃣ Serve with extra tortilla chips on the side!
