🌮🍲 Chicken Tortilla Crockpot Soup 🍲🌮

⭐ Ingredients
• 1 lb shredded cooked chicken
• 1 can whole peeled tomatoes, mashed
• 1 can enchilada sauce
• 1 onion, chopped (any variety)
• 1 can chopped green chiles
• 2 garlic cloves, minced
• 2 cups water
• 1 can chicken broth
• 1 teaspoon cumin
• 1 teaspoon chili powder
• 1 teaspoon salt
• ¼ teaspoon black pepper
• 1 bay leaf
• 1 package frozen corn
• 1 can black beans, rinsed
• 1 tablespoon chopped cilantro
For the Tortilla Strips
• 7 corn tortillas
• Vegetable oil
👩🍳 Directions
1️⃣ Add to the Crockpot
Place the shredded chicken, mashed tomatoes, enchilada sauce, chopped onion, green chiles, and minced garlic into the slow cooker.
2️⃣ Add the Broth & Seasoning
Pour in the water and chicken broth. Add cumin, chili powder, salt, pepper, and the bay leaf.
3️⃣ Add the Good Stuff
Stir in the corn, black beans, and cilantro.
4️⃣ Slow Cook
Cover and cook:
• Low: 6–8 hours
• High: 3–4 hours
5️⃣ Make the Tortilla Strips
Preheat oven to 400°F (200°C).
Brush tortillas lightly with oil, cut into strips, and spread on a baking sheet.
Bake 10–15 minutes until crispy.
6️⃣ Serve
Ladle soup into bowls and top with crispy tortilla strips.
