There is nothing quite like the aroma when the thyme and allspice hit the heat. That feels like a warm hug in my kitchen. These featured spices truly make my Caribbean oxtail stew not only delicious but also healthy with the rich nutrients and phytonutrients from all the ingredients.🥄

Allspice tastes like a blend of cinnamon, cloves, and nutmeg with multifaceted health benefits. Its active compound called eugenol can help as a pain relief for joint and muscle pain. Eugenol can stimulate digestive enzymes, breaking down the proteins and fats, reducing gas and bloating. Polyphenols in allspice including quercetin and gallic acid can inhibit inflammatory markers to support those with arthritis. It also acts as a mild tonic to ward off colds and flu due to its antimicrobial and antifungal properties. Especially, the berry is a mineral powerhouse with a significant amount of manganese for bone health and metabolism, iron and copper for red blood cell production, and potassium for heart rate and blood pressure.

Thyme is famous for its ability to treat respiratory issues. The thymol oil in this herb is a natural antimicrobial and antibacterial compound that can inhibit infection and support the immune system effectively.

Scotch Bonnet and sweet peppers are far more than just a source of heat but an abundant supply of vitamin C. The fiery hot pepper provides a fruity aroma balancing the heavy savoury note of beef and allspice. The colourful sweet peppers also add thickness and natural sweetness to the gravy while making the dish visually so appetizing.

Finally, oxtail is one of the most collagen-rich cuts of meat. The gelatin, as the result of the collagen broken down in the simmering cooking process, is greatly helpful for joint health, gut healing, and skin and hair beauty treatment. The rich source of zinc is beneficial for human reproductive health. The top tier iron in oxtail can efficiently supplement this mineral for our energy level due to the direct absorption of heme iron from animal sources as well as the way it’s prepared in the combination of vitamin C from peppers and thyme.

In a nutshell, this is truly a therapeutic dish to restore our well-being. It’s also a comforting food to enrich our souls.

✨Did you know that Allspice Tea is a staple home remedy for settling an upset stomach, easing bloating, and soothing menstrual cramps?
It takes a few minutes with 7-10 berries and the amount of water according to the taste preferred. Crush the berries and bring 500ml of water to a boil in a small saucepan. Simmer for 10 minutes to have a beautiful amber red color. Turn off the heat and let it sit for another 2 minutes so that its oils are extracted. Honey or a splash of condensed milk could be added as a sweetener.

✨Did you know that thyme steam can help to alleviate the respiratory congestion?
Put a handful of fresh thyme in a bowl of hot water, put a towel over your head and breathe in the steam. You would absolutely feel at ease soon after that.

My nutritious and yummy pie has fresh pumpkin puree, eggs, milk, brown sugar, vanilla extract, ginger, and cinnamon. The kitchen is full of a mixed aroma giving a cozy feeling on the first day of the New Year ✨!
A touch of whipped cream is optional. Overall, pumpkin pie is really a favorite dessert for this festive season 🥧🧡!!

My eggplant pickles is really tasty and super healthy.

It’s a beautiful array of eggplants, salt, vinegar, garlic, hot corni di capra peppers, oregano, and basil. The pickles pack of phytonutrients and flavors to serve as a delicious sidedish.

It’s so joyful and relaxing to enjoy the fragrance of sweet basil in my kitchen space. It’s the mixed scent of guava leaves and mint. The dish becomes more unique with basil. Garlic, chilli, oregano, and olive oil play the role as the defenders for our wellbeing.

The pickles are perfectly layered in the sandwiches for the bread lovers.

My version of dandelion fritter is delicious with minced organic dandelion leaves, white onion, pink salt, and a touch of soy sauce for umami flavour. It could be a side dish with rice or a light snack. 💜

Black beans are recognized with high credit for their health benefits and commonly used around the world.

Black beans have high protein for our bodily functions, rich fibre to manage blood glucose, B vitamins for brain health, iron for hemoglobin production, magnesium and potassium for muscle contractions, phosphorus for bone health, zinc for protein synthesis, copper for iron metabolism, polyphenols to protect cells from oxidative damage, anthocyanins to prevent type 2 diabetes, saponins and phytosterols to reduce cholesterol levels. The list reflects how valuable this type of beans is.

The legume has so many variations across various cuisines to enjoy its taste and nutrition benefit. It could be black bean soup, black bean hummus served with pita bread or vegetables, black bean chilli, and many more savoury dishes in Caribbean cuisine, Mexican cuisine, etc. Black beans are also a delicious ingredient in desserts which is very nutritious and satisfying.

My black beans were cooked with prosciutto shank, diced white onion, and a splash of wine to enhance the flavour. The dish goes well with black sesame seed rice as well. The meal is simple but truly delicious ✨🥄!!
