Hello, Friends! Here is a fun and beautiful reminder to come back to the present moment, become aware of what’s happening in your body, relax, breathe, and smile. ☺️😮‍💨🐸

Throughout this Christmas season, as busyness slowed down, and stillness, presence and reflection settled in, I’ve felt the warmth of gratitude permeate my entire being. 🥰

I have a tendency to focus on the past and future, and to be hard on myself. Even though this year didn’t feel as accomplished as I’d hoped, by typical standards, I realized how far I’ve come internally. 💫

I have so many plans, goals, and ideas, and I want them all accomplished yesterday! I can get frustrated when unexpected circumstances, painful experiences, and obstacles get in my way. I’m always learning that you can have the perfect plan in place, but sometimes God has another path in mind…as much as it can irk me! 😅

2021 has brought another year of lessons in patience, forgiveness, compassion, priorities, perspectives, letting go (in more ways than one), surrender, resilience, self-love, boundaries, and so much more. 🙏

I’ve realized that every horrible experience in the past brought at least one nugget of positivity and lead to upgrading my life in some capacity. It can be difficult to recognize the gift in that tumultuous moment, and it may not even become apparent until years later. Just trust me, it’s there. 🎁

It’s not always easy to work through these lessons, search for the gift in every situation, and keep faith. It’s a work in progress, but I’m slowly learning to relinquish control over how I think things *should* be, and trust God’s plan for the growth & evolution of my soul. ✨

Wishing everyone a very Happy New Year! May the transition to 2022 bring you a sense of peace, gratitude, joy and fulfillment, which lasts the whole year through. 🎊🍀🌈💐💖🙏💫💃🕺

Although we’ve all had challenges over the past few years, there is still so much to be grateful for. 🙏

PALEO LEMON BLUEBERRY MUFFINS 🍋🫐

Dry Ingredients:

✅ 2.5 cups unblanched almond flour
✅ 1/4 cup tapioca flour
✅ 2 scoops unflavoured clean collagen powder
✅ 3/4 baking soda
✅ 1/2 tsp extra-fine Himalayan rock salt

Wet ingredients:

✅ 1 tbsp coconut nectar
✅ 2 tbsp coconut oil (melted, room temperature)
✅ 3 large eggs
✅ 1/4 cup lemon juice
✅ 1 tsp lemon zest
✅ 1 cup blueberries (fresh or frozen)

Directions:

1️⃣ Preheat oven to 350 degrees F.
2️⃣ Line muffin tray with 9 unbleached muffin liners.
3️⃣ Sift all dry ingredients into a large bowl and whisk together.
4️⃣ In a separate small bowl, whisk the eggs together.
5️⃣ Add all remaining wet ingredients to the eggs, except the blueberries, and whisk together.
6️⃣ Pour wet ingredients into bowl of dry ingredients and mix gently until just blended and no more dry ingredients showing.
7️⃣ Sprinkle blueberries into batter, so they don’t stick together if frozen. Fold them in gently. Don’t over-mix!
8️⃣ Divide batter evenly among muffin liners.
9️⃣ Bake for 20-22 minutes until golden on top and a skewer or wooden toothpick comes out clean when inserted to the centre of a muffin.
🔟 Let muffins cool for 5 to 10 minutes and then carefully transfer them to a cooling rack. Allow them to cool for another 20-25 minutes and then enjoy!

If you allow it, change & hardships can be the positive catalyst for discovering aspects of yourself, which were previously untapped. The Empowered Woman, she moves through the world

with a sense of confidence and grace.

Her once reckless spirit now tempered by wisdom.

Quietly, yet firmly, she speaks her truth without doubt or hesitation and the life she leads is of her own creation.

She now understands what it means to live and let live.

How much to ask for herself and how much to give.

She has a strong, yet generous heart and the inner beauty she emanates truly sets her apart.

Like the mythical Phoenix,

she has risen from the ashes and soared to a new plane of existence,

unfettered by the things that once that posed such resistance.

SPICED APPLE CARROT MUFFINS 🍎🥕

Ingredients:

* 2 cups packed almond flour/almond meal (sifted to remove lumps)
* 1 cup h**p hearts
* 1/2 tsp cinnamon
* 1/2 tsp nutmeg
* 1/2 tsp ground cloves
* 1/4 tsp ground ginger
* 1 tsp baking soda
* 1/2 tsp Himalayan salt (fine)
* 1/2 cup chopped pecans
* 1/4 cup coconut nectar
* 3 eggs
* 6 tbsp coconut oil (melted)
* 1 cup grated apple
* 1 cup grated carrot

Directions:

1. Preheat oven to 350 degrees Fahrenheit.
2. Line muffin tin with unbleached paper liners or brush/wipe with coconut oil to prevent sticking.
3. In a large bowl, mix together the almond flour/meal, h**p hearts, cinnamon, nutmeg, ground cloves, ground ginger, baking soda, Himalayan salt, and chopped pecans.
4. In a separate, smaller bowl, whisk together the coconut nectar, eggs, and melted coconut oil.
5. Once combined, whisk in the grated apple and carrots.
6. Pour wet ingredients into the bowl of dry ingredients and whisk until just combined.
7. Spoon the batter into the muffin cups, filled to the top.
8. Bake for 30 minutes.
9. Let cool for 5 minutes before lifting muffins out and serving.
10. Once fully cooled down, store leftovers in an airtight container in the fridge or freezer.
11. To reheat, set oven at 300 degrees F. Place the muffin(s) directly on the rack and heat till desired.

Enjoy! The recipe above makes 10 standard-sized muffins. 😛

These are some things that are helping me right now. But to be completely honest, I’m still struggling in some ways. And that’s okay. I haven’t maintained a daily routine, but I’m working on it. I’m a perfect work in progress, too. ☺️⠀

Whatever you’re feeling right now is okay. However you’re coping is also okay - we’re all doing the best we can given our conditioning, circumstances, and habits. Let’s give ourselves some grace while continuing to do things that support us and lift us up. ⠀

Eating healthy food is a form of self-respect! Make the right choices to nourish your body & mind.

Doing so will ultimately help you reach the goals you’re striving for in your health, fitness, career, relationships, or any other area.

Our society is obsessed with “hustle” & busyness these days. It’s like a badge of honour, which we boast about. It’s become too common that sacrificing our health & self-care is expected & accepted to get ahead, especially in business.

Most of us know better, but keep ignoring the red flags that we’re burning out. Then comes the crash, sometimes sooner rather than later. Your physical, mental and/or emotional health are then suffering immensely and simple daily tasks can become impossible. It really hits home when you watch it happen to someone you care about, or yourself!

I was watching “Dragon’s Den” and saw a pitch about a place where busy professionals could take naps during the day to be more productive. One of my favourite Dragons said, “I get three to four hours of sleep every day. I don’t do it because I want to. I do it because I have to. I’d rather be rich and tired than well-rested and poor.” 😳

I was shocked & sad to hear that, because #1: he definitely has a choice, #2: there’s such a thing as balance, and #3: at that rate, with so much stress and so little sleep over the long-term, he’s severely increasing his risk for developing major health issues. Will being rich really matter if he can no longer enjoy his possessions, if he lands in a hospital bed, or if his life is cut short?

“Wealth” comes in many other forms, other than money. Being wealthy can also mean being abundant in happiness, love, purpose, family, friends, freedom, time, health, spirituality, fulfillment, adventure, contribution to others, and much more. Those are the most important aspects of wealth to stay healthy for. Without our health, we really have nothing! It should always be a top priority and never taken for granted.
