Sweet potato, chickpea, carrot and goat cheese salad🥕 I’ve made many new recipes this year - and this one might have the top spot. Amazing for a New Year’s Eve appetizer 👀 or a fulfilling lunch! It’s absolutely packed with fibre & iron, and has several sources of protein and healthy fats. A must try!

Some of the delicious meals I tried in Patagonia!
10 years ago I would’ve been thinking almost SOLELY about the food I’d be having on vacation. I tried fighting the urge to calorie count but often couldn’t. It took so much away from going on vacation! I’m so grateful to now choose what to eat based on what looks good, what will fuel my hikes or adventures, who I’m with, and what I genuinely want - not the calorie number.

If you feel consumed by food thoughts on vacation, you’re not alone. And it’s one of many reasons why working on your relationship with food can be life-changing.

Pictured: a Chilean “completo” (which I definitely plan to recreate at next summer’s barbecues), a lamb-and-veggie meal at a Patagonian ranch where I went horseback riding and milked a cow, plus a bunch of other foods I loved - some traditional, some not, and all chosen with freedom!

Just made this for lunch and thought I’d share it! It took me 16 mins to make. Just cook your pasta according to the package directions, and cook the veggies with the cauli crumble at the same time. Add the sauce after 3-4 mins and voila! You’re done.
**This is a particularly high fibre meal, if you’re not used to a lot at once then definitely get a lower fibre pasta + limit the portion of the cauli crumble to half (1/8 package).
**If you can’t find the cauli crumble, any meat replacement will work or TVP!

Do you ever feel like you’re “good” all week with food… only to feel completely out of control on the weekend?

That’s not a lack of willpower — it’s a biological response from your body to counteract the restriction. 🚫🥗➡️🍫
When you restrict your body (physically or mentally), cravings actually increase. Your brain is wired to increase cravings as a way to compensate for the restriction.

This is why dieting or strict food rules often exacerbate cravings and leave you stuck in the same cycle:
restrict → frustration → increased cravings → overeat → guilt/binge → guilt and shame for overeating → more over-eating because you’ve already “cheated” → panic and fear of gaining weight → restrict again

But there is a way out. 🙌
