I had some left over white rice and baked chicken. Cut the chicken into bite size pieces, cut up some red onion, sweet bell peppers, and mushrooms. Sautéd that with olive oil, and seasonings in my cabinet that I knew would mimic a smoky bbq flavor. Throw it in a bowl and drizzle with hot honey bbq sauce.
