Cooking something different kills the monotony in my life.. what about you?
Recipe 👇

—-𝑺𝒕𝒖𝒇𝒇𝒆𝒅 𝑷𝒂𝒑𝒓𝒊𝒌𝒂—-

150g Rice
1 Onion
2 Garlic clove
50g Beans
50g green peas
2 Tbsp Olive oil
100g Grated Cheese
200 ml Vegetable Broth
4 Paprika
Salt to taste
Pepper
2 Tbsp Ajwar

1. Cook rice. Wash paprika and cut the top and remove the seeds.
2. For Stuffing: Add oil in the clay curry pot. Sauté chopped onions, garlic. Add beans and green peas and fry for 5 min. Add salt and pepper to it. Add the cooked rice and mix well.
3. Fill the stuffing in the paprika and put it in the clay pot. Boil the vegetable broth with Ajwar in a separate pan for 5 min.
4. Pour the broth on and around stuffed paprika. Put some cheese on top of the paprika. Cover the lid and place it in the oven. Do not preheat the oven. It may crack the clay pot due to sudden heat exposure.
5. Cook it for ca. 40 min at 160 C on Fan-forced setting.

Enjoyed cooking ayurvedic chickpeas curry. The taste is so rich and it is a protein bomb. So healthy!!

𝓐𝔂𝓾𝓻𝓿𝓮𝓭𝓲𝓬 𝓬𝓱𝓲𝓬𝓴𝓹𝓮𝓪𝓼 𝓬𝓾𝓻𝓻𝔂
Pitta & Kapha balancing

200 g dried chickpeas
1 medium Onions
2-3 medium Tomatoes
2 tbsp Ghee
1 tbsp Cumin seeds
1 tbsp Coriander powder
1 tsp turmeric powder
1/2 tbsp mustard seeds
Salt to taste
Red chili powder (to taste) (optional)
1/2 tbsp Ginger Garlic Paste
1-2 Green chilies
Fresh coriander to garnish

1. Soak the chickpeas overnight in water. Boil it until the chickpeas are soft. Keep it aside.
2. Heat ghee in clay curry pot. Add green chillies, cumin and mustard seeds. Stir it.
3. Add onion and cook slowly until golden brown. Add ginger garlic paste.
4. Add turmeric and salt to taste and stir.
5. Add chopped tomatoes and cook at least 15 min. Add water if sticking.
6. Add all the spices and cook for 5 min. Add the chickpeas and stir well. Add 1/2 cup water and cook for 10 min with closed lid. Garnish with fresh coriander leaves.
7. Serve with basmati rice or bread.

I have cooked in all types of pots but claypots are the best utensils for making curry. Flavourful and absolutely delicious with a touch of earthy aroma.. 😌

We are back after a long time with another exciting recipe to feed your ayurvedic souls. It's amazing how you can add ayurvedic twist to almost everything. :)

🌟 𝓐𝔂𝓾𝓻𝓿𝓮𝓭𝓲𝓬 𝓟𝓪𝓼𝓽𝓪 𝓻𝓮𝓬𝓲𝓹𝓮 🌟

I͟n͟g͟r͟e͟d͟i͟e͟n͟t͟s͟
230 g dried pasta
1/4 cup Olive oil or ghee
Pinch of Hing (Asafoetida)(optional)
200 g French or green beans, trimmed and halved crosswise
320 g Zucchini or other Summer Squash, quartered lengthwise and sliced
2 tsp Olive oil
3/4 cups dry bread crumbs
3/4 cups finely-chopped fresh Basil
1/2 cups finely-chopped flat-leaf Parsley
1/4 cups minced fresh mint
salt to taste
Black pepper

P͟r͟e͟p͟a͟r͟a͟t͟i͟o͟n͟
Cook the pasta until firm. Drain any excess water.
Heat ghee or oil with the Asafoetida in a skillet over low heat. Add the French or green beans, cover, and sauté for 2 to 3 minutes.
Add Zucchini or summer squash, sprinkle with liquid seasoning or salt, cover, and cook until tender, stirring occasionally.
Heat another batch of oil in a skillet. Add Asafoetida and sauté for 30 seconds, until fragrant. Add bread crumbs and sauté, stirring constantly, until golden brown and crisp.
Add Basil, Parsley, mint, and a sprinkling of Black pepper, and stir. Toss with the pasta and vegetables. Adjust the seasoning.
