BIRTHDAY CAKE COOKIE DOUGH πŸ˜‹ These are just perfect for curbing my Godzilla-sized sweet tooth πŸ¦– after iftar! I am so living for these *Kourtney Kardashian voice* Just mix everything together and roll into balls πŸ˜‹ β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”-
β€’3 tablespoons unsalted creamy cashew butter (I used ).
β€’4 tablespoons coconut sugar (also ).
β€’2/3 cup oat flour.
β€’1.5 teaspoons almond extract (found in in the baking aisle!).
β€’2.5 teaspoons vanilla extract.
β€’1/4 teaspoon Himalayan salt.

I had another date-myself-day today.

My first fat loss challenge at and my incredible client Omar won first place!!! I’m feeling PURE PRIDE AND HAPPINESS!! πŸŽ‰πŸ˜πŸ‘πŸ»πŸ‘πŸ»πŸ’ƒπŸ» 6 weeks, ~9 kilograms fat down and one unbelievable shift in mood, performance, spirit, goals and all around energy. His impressive discipline, dedicated mindset and most importantly the trust he gave me and my work meant the WORLD 🌍 I’m so, so proud of you Omar and we still have big plans in the works!! If there’s one food I could eat for every single meal for the rest of my life, it’s baked po-tay-toes!! (Lord of the rings fans will relate πŸ§πŸ»β€β™€οΈπŸ§™πŸ»β€β™‚οΈ).
If you’re one of my clients and are bored of having plain old rice everyday, once you try oven-baking potatoes the right way, you’ll NEVER go back. Crispy skins on the outside, fluffy on the inside.. come to mamaaa. ...
What you need:
β€’1/2 kg small white potatoes, scrubbed really well.
β€’2 cloves minced garlic.
β€’1/2 teaspoons sea salt.
β€’1 tablespoon olive oil.
β€’Fresh chopped parsley.
How to make:
1) Preheat oven to 200C. Get a bowl and mix in the olive olive oil, garlic and salt.
2) Chop the potatoes into quarters and add to the bowl of olive oil and toss them really well until they’re all coated with the mix!! Put the potatoes in a large baking pan and spread them out apart in an even layer.
3) Roast em in the oven for around 30-40mins or until they’re brown and crisped up. You can move them around a couple of times when they’re cooking so they crisp and brown up on all sides!
4) Toss them with the fresh parsley on top when they’re out of the oven.
