Many people think that it is hard to eat out if you want to eat healthy!
I eat mainly low carb high protein/fat and it is actually not that difficult. Most places have some sort of salad and you just add some protein to that.
Some places even serve glutenfree bread or have a variaty of lovely veggies and salads.
Just look at this tasty salad I had some days ago at in Copenhagen. And some lovely fish dishes I had in Alicante this summer.

Eating healthy is a choice and this choice makes my body happy 🥦🫐🫑🥕🥑🍉🫛

Are you a sugar addict? Always looking for the next sweet treat or eating dessert in stead of dinner? Well refined sugar can cause so much damage to your body and you have properly already felt symptoms. You can help your body break this addiction:

- Reduce stress: as stress often makes you crave carbs. Find the root cause of your stress and adress it, help yourself with meditation and deep breathing.

- Workout: as is will make you feel good and reduces cravings. Find out what kind of workout you prefere.

- Eat real food: use real ingredients and cook your own food. Eat lots of veggies, protein and healthy fats. These will keep you full for long and stabilize your bloodsugar.

- Get enough sleep: not sleeping enough will make you crave more food especially carbs.

- Supplements: support your body with supplements that can help you control your cravings fx. Vitamin D and omega-3.

In Denmark summer = strawberries 🍓

So what better way to celebrate summer than with lovely raw mini strawberry cheesecake. Light and lovely texture, just so yummy 😍

Mini jordbær raw cheesecake

Ca. 16 stk i cupcakes str eller 1 stor (20-22 cm springform)

Bund:
100 g mandler (rist gerne i ovnen)
100 g solsikke frø (rist gerne i ovnen)
100 g dadler (uden kerne)
2 spsk ahorn eller dadel sirup
2 spsk kokosolie, smeltet
Et nip Himalaya salt

Fyld:
250 g cashewnødder (sæt i blød natten over)
70 g kokosolie, smeltet
250 g jordbær (frosne der er optøet kan også bruges)
1 citron, skal og saft
5 spsk ahornsirup
1 tsk ren vanilje
Et nip Himalaya salt

Chokolade glasur:
60 g kokosolie, smeltet
25 g kakao
60 g ahornsirup

Fremgangsmåde:
1. Bund: rist mandler og solsikkefrø i en 200 g varm ovn i ca 10 min. Når de dufter har de fået nok.
2. Hak nødder og frø i en foodprocessor.
3. Tilføj de resterende ingredienser til bunden og hak masse sammen til den er sammenhængene.
4. Fordel massen i muffins forme af silikone og sæt i fryseren.
5. Fyld: tilføj cashewnødder, kokosolie, citron skal og saft, ahornsirup, vanilje og salt til en god blender. Blend massen godt sammen, skrab siderne ned.
6. Tilføj jordbær og blend til massen er helt glat.
7. Hæld fyld over bundene og stil tilbage på frys så de kan sætte sig.
8. Glasur: bland den smeltede kokosolie med kakao og ahornsirup.
9. Tag kagerne ud af fryseren og overhæld med glasuren.
10. Skal kagerne bruges med det samme stilles de på køl og tør op der, ellers kan de sættes tilbage i fryseren til de skal bruges.

Are you guys prepping for Eid? Well we are ✨️

Today I am sharing with you a lovely and easy dessert very suitable for Eid. You only need few ingredients and they will not take much of your time - great for busy mums 😉

Eid Halwa:

200 g bløde dadler (alternativ lig dem i blød)
20 g kokosolie, smeltet
180 ml tahin
1 tsk kardemomme
1/2 tsk kanel
1/2 tsk himalaya salt

Dekoration:
Nødder efter eget valg, gerne lidt salte. Evt. guld støv eller tørrede roser.

Fremgangsmåde:
1- Tilføj alle ingredienser (på nær nødder) til en foodprocessor og blend til ensartet masse.
2- Fordel dejen i små silikone forme. Har du ikke små forme kan du sagtens fordele i en bageform og skære ud efter en tur i fryseren.
3- Dekorer med nødder efter eget valg, jeg brugte saltet mandler og cashewnødder samt usaltede pistacie.
4- Frys i et par timer.
5- Fjern fra fryseren og tag ud af formene. De tør op hurtigt og er derfor klar til servering efter kort tid.

Magnesium - probably my favorite mineral. It is essentiel for so many process in the body, so you really have to look out for this mineral and try to incorporate it in your meals. Magnesium citrate is a great choice before sleep if you have a hard time finding rest or if you have leg cramps. Great for people with stress, depression and anxiety because magnesium is a great support for the nervous system.

Today it is a salad and what a delicous salad 😋 Fennel and walnut salad great for a light dinner these hot days combined with some protein 🐔🐟

Fennikel og valnødde salat:

50 g valnødder, rist på en tør pande 5-10 min
1 stk fennikel, skåret i tynde skiver
1 grøn peber, skåret i små tern
4 stk radiser, skåret i tynde skiver
1 stk æble, skåret i tynde skiver
1 stk forårsløg, finthakket

Dressing:
1/2 citron, saft herfra
1 spsk æbler cider edikke
2 spsk oliven olie
1 spsk nigellafrø
Salt og peber

1. Klar gør alle grøntsager og bland dem i en skål.
2. Bland dressingen og rør den forsigtig sammen med grøntsagerne.
3. Tilføj valnødder.

Velbekommen - dejlig salat som tilbehør til kylling eller fisk.
