Good morning all, I hope you are all fit and well. I wanted to inform you all that I will not be restarting my meetings at Moonlighters. I am in the ‘at Risk category’, with both heart and lung problems, and have been advised to remain mostly at home until a vaccine is found, whilst I cannot do this indefinitely, I have been extremely selective about where and when I go out. The odd shopping trip, and accompanying my hubby when collecting a takeaway etc. I cannot envisage being able to hold classes, for some while, so I have decided to hang up the scales etc. I do hope you all continue on your journey, and I am always available to answer any questions you may have. I will keep the Team Slimming page active, and on occasions add to it. It has been a pleasure knowing you all and I wish you all well. If you do see me, please stop and have a chat, I would love to know how your doing, myself not so well at the moment, eating far too much, and struggling to get back on plan. Lastly I would like to thank Attie and Lee, they have been so supportive over the last 5 years, and deserve to achieve great things. Adios my friends.

Gingerbread Biscuits

Serves: 30 Syns per serving: 1.5


A low Syn version of gingerbread biscuits; it’s up to you whether to make them into gingerbread men!

Ingredients
200g plain flour
60g flora light
60g granulated sweetener
1 Large Egg beaten
4 tsp ground ginger
2 tsp ground cinnamon
1 tsp Bicarbonate of Soda
Frylight

Granulated sweetener to dust
(Canderel is recommended as it is used 1-1, if using a different sweetner find out its ratio to sugar for sweetness.)

Method
Preheat the oven to 180°C Mix all the dry ingredients (except the Canderell sweetener to dust) together, then rub in the Flora Light until you reach the breadcrumb stage. Stir in the Canderell. Mix in the beaten egg, and stir to form a dough Tip out the dough onto a clean lightly floured surface and knead for a few minutes until it's smooth Roll out the dough (approx 1/4" or 5mm thick) then use a 1.5 inch round cutter to cut out 28 - 30 shapes Place them on a non stick baking tray, sprayed with a fine mist of Frylight, and bake for 10 - 15 minutes until golden brown. Allow to cool, then either dust or use a very small amount of icing sugar and pipe small lines over, but be sure to syn for it.

Chana masala

This tasty and healthy dish of spiced chickpeas makes a great meal when served on its own or with a salad or rice dish. It originated in the northern Indian state of Punjab.
Serves: 4 Syns per serving: FREE on Extra Easy Suitable for vegetarians

Ingredients
Low calorie cooking spray
1 cinnamon stick
3cm piece of ginger, peeled and cut into thin shreds
6 garlic cloves, peeled and crushed
1 fresh green chilli, deseeded and thinly sliced
1 small onion, peeled and finely chopped
1 tbsp medium curry powder
110g passata
1 large potato, peeled and cut into cubes
400g can chickpeas, drained and rinsed
A squeeze of lemon juice
¼ tsp garam masala
Salt
2 tbsp chopped mint leaves
2 tbsp chopped coriander leaves

Method
Spray a large frying pan with low calorie cooking spray and place over a medium heat. Add the cinnamon, ginger, garlic and most of the chilli and stir-fry for 1 minute. Add the onion and cook for 6-7 minutes or until softened. Add the curry powder and stir-fry for 1 minute and then add the passata, 150ml of hot water and the potatoes. Stir and bring to the boil, cover and reduce the heat to low. Cook gently for 10-12 minutes and then add the chickpeas and cook for 5 minutes or until the potatoes are tender. Remove from the heat, sprinkle over the lemon juice and garam masala, season well and stir in the chopped herbs. Serve garnished with the remaining chilli.
Tip: This recipe is suitable for freezing.

Vegetable Pappardelle with poached egg

Serves: 1 Syns per serving:FREE Suitable for vegetarians

Slicing into a softly poached egg is such a satisfying moment, and the creamy yolk adds a lovely richness to the sauce.

Ingredients
100g dried pappardelle pasta
50g frozen peas
230g mixed vegetables pack (eg carrots, mangetout, green beans and baby sweetcorn)
low calorie cooking spray
5 cherry tomatoes, halved
1 small garlic clove, crushed
3 tbsp vegetable stock
1/2 tsp all-purpose seasoning
2 tbsp quark
salt and freshly ground black pepper
1 egg

Method
Cook the pasta according to the packet instructions, adding the peas and hard vegetables from the pack such as carrots 4 minutes before the end of cooking time. Add the remaining vegetables from the pack 2 minutes before the end of the cooking time. Drain, reserving a few tablespoons of the cooking liquid. Meanwhile, spray a non-stick frying pan with low calorie cooking spray and place over a medium heat. Add the cherry tomatoes and cook for 3-4 minutes or until beginning to soften. Add the garlic, stock and all-purpose seasoning and cook for a further 2 minutes. Remove from the heat, toss with the quark and pasta, season to taste and keep warm. Bring a small pan of water to the boil and stir briskly with a whisk. Break in the egg, remove from the heat and cover for 4 minutes. Drain the egg and place on top of the pasta, then grind over a little black pepper to serve.

Tip: Pregnant women, the elderly and babies are advised not to eat raw or partially cooked eggs

Baked Onion Bhajis



Recipe – Makes 6 Syn Free

Ingredients
Low calorie cooking oil spray
3 large onions, halved & finely sliced
1 tbsp curry powder
1/2 tsp ground coriander
1/4 tsp turmeric
1 egg
Seasoning

Method
Preheat your oven on 200 degrees. Spray a large frying pan with oil spray and gently fry the onions until tender. Now add all of the spices and seasoning and continue to fry for 2 more, stirring well until everything is coated.

In a large mixing bowl, crack in the egg and lightly whisk. Stir in the cooked onions and give it a good mix. Spray a large muffin tin or baking tray with frylight. Now spoon the mixture evenly in to each muffin hole or spoon out 6 dollops on a baking tray.

Bake in the oven for 20 minutes and stack up on a plate.
