blue berry & choc chips muffins GF DF
Wet ingredients:
- 2 ripe bananas, mashed
- 2 eggs room temp
- 60ml maple syrup
- 40ml olive oil
- 1 teaspoon vanilla extract
Dry ingredients:
- 100g rolled oats
- 40g buckwheat flour
- 40g brown rice flour
- 40 g sorghum flour
- 1 TSP baking powder
- 100g frozen blueberries
- 50g dark chocolate chips
Method:
1. Add all the wet ingredients to a mixing bowl and mix until well combined
2. Add oats, flour, and baking powder to the same bowl. Mix together
3. Fold in the blueberries and dark chocolate chips
4. Bake for 20-25 minutes at 375 until golden and set

Food & work + a collagen cookie recipe

* 1/3 cup butter softened at room temperature
* 1/2 cup date or coco sugar
* 4 tbsps collagen
* 2 tbsp maple syrup
* 1 egg
* 1 tsp vanilla extract
* 1 3/4 cup buckwheat flour
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1/2 cup of dark chocolate chips

Preheat oven to 375 F
Cream together butter sugar and collagen until nice and combined
Whisk on high - adding in maple syrup, egg, vanilla until nicely combined
Fold in remaining ingredients
Scoop onto baking sheet and bake for about 12 min

1/3 cup tahini
Salt
1/4 cup shredded coconut
1 tbsp almond milk

Bake at 350 for about 15 min

Inspo from

Base layer:
3 tbsp millet flour
1.5 cup oat flour (can sub for almond)
1 tbsp match (optional)
1 tbsp chia seeds
3 tbsp melted coconut oil
3 tbsp maple syrup
Mix all together until sticky, use your hands to make a layer in a bread tin ~ bake at 350 for 12/15 min

Middle layer:
7 soft medjool dates
1/4 cup tahini
1 tbsp almond milk
Place all in a food processor, use your hands to place on top of the base layer. Place in freezer

Top layer
Dark chocolate (1 bar)
Use the double boiler method to melt, pour ontop of date layer and place back in freezer.
