blue berry & choc chips muffins GF DF
Wet ingredients:
- 2 ripe bananas, mashed
- 2 eggs room temp
- 60ml maple syrup
- 40ml olive oil
- 1 teaspoon vanilla extract
Dry ingredients:
- 100g rolled oats
- 40g buckwheat flour
- 40g brown rice flour
- 40 g sorghum flour
- 1 TSP baking powder
- 100g frozen blueberries
- 50g dark chocolate chips
Method:
1. Add all the wet ingredients to a mixing bowl and mix until well combined
2. Add oats, flour, and baking powder to the same bowl. Mix together
3. Fold in the blueberries and dark chocolate chips
4. Bake for 20-25 minutes at 375 until golden and set
