Nightfall, She stretches shadows into darkness as Her planets blink awake across the sky. Too serene for the companionship of fear. Twilight’s allure is in the glow that softens the edges of each silhouette; Her golden light flirts through the air coaxing beauty out of everything it lands on. I know that god is everywhere, yet, I certainly feel His presence most when his works are unveiled on the grandest scale before my eyes. I remember His infinitude, His omnipotence, His ubiquitous presence and thus, ours. Tears in my eyes, courage in my heart. (23/05/23)

Happy birthday habibi 🎂 thank you for being the proof that life works in mysterious ways, for witnessing with me that miracles do happen and showing how magic of love can rearrange your life into new order.

We started out as classmates in business school, and then the line went dead for 9 years. A few messages here and there, but nothing that elicited the rollercoaster journey we’ve been on for the last few months. A recipe for experiencing unrefined, daily magic (vegan, gluten-free). Our world is overflowing with natural enchantment appearing as flickers of light and beauty. Revelations for our eyes, they come and go, true to the definition of revelation: unveiling and re-veiling. You’ll know it’s mystical when the moment goes just as fast as it came, like a glitch in the system correcting itself. There are ways to stay longer in this space. Magic is anything outside the bounds of what we typically expect from moment to moment. Your consciousness at play, waking you up from the daily scheduled programming.

Ingredients to know when the world is reaching out to you:

A undulation of space and time
An all-encompassing present moment
One wide open, unbuttoned heart
Some tingles in your limbs and lightness of the body
Crystal clear vision with bright, vibrant colors
A state of wonder, appreciation and fascination

Arugula-Tomato Salad (vegan, gluten-free). Incorporating fresh greens into every meal is essential and arugula happens to be my favorite at the moment. Or as my granny in South Africa calls it, rocket. It’s one of the most incredible greens for cleansing your blood due to phytochemicals and antioxidants present. Rocket because it will blast you off into new realms of invigorating health. This salad is tossed with olive-parsley pesto, a spoonful or two of dijon mustard, some walnuts for crunch and diced tomatoes to balance the arugula spice. Adding some quinoa or avocado is also a great choice.

Ingredients:
2-3 cups of chopped arugula
1 medium tomato of choice

Olive-Parsley Pesto:
5-6 sprigs of parsley
3-4 giant green queen olives
3 tbsp of filtered water

2 tbsp dijon mustard
A generous sprinkle of walnuts

A quick note about the olive-parsley pesto: I used olives that weren’t in brine but rather soaked in olive oil, sundried tomato paste, basil, spices and lemon peel. Simply the most flavourful, delicious olives I’ve ever purchased. So this gives the pesto a lot of the flavour. If you’re using olives in brine, try adding a tablespoon of olive oil, some sundried tomatoes or roasted garlic for extra deluxe taste experience. ;)

A Sea-Salted Fairy (vegan, gluten-free). Before serving any creative cooking, I realized a chef must serve up herself first. An omen for the quality of food is the cook’s energy. Recipes do not have souls, it is those who prepare the recipe that infuse it with their soul, their love. I’ve seen two people make the exact same recipe only to see it turn out completely different because the unique quirks and peculiarities of a person play a role in the creation process.

Food takes on the energy of its maker, even if it’s a grocery store employee with plastic gloves and standardized measuring cups, that’s the energy it will taste like. Meeting the chef before the food will give an intuitive reading of what type of cuisine will be served. So here I am, introducing myself to you!

Fairy Ingredients:
3 heaped tablespoons of sustainability
1 cup of cruelty-free love
Generous sprinkles of innovative flare
A splurge of healing spirits
A Handful of organic vibrancy
Drizzles of artful plating
Garnish with tropical spice

Directions:
1. Combine the sustainability with tropical spice and you’ll find yourself in Costa Rica.

2. Fold into the mix: the sprinkles of innovative flare with cruelty-free love and you’ll suddenly see a vegan chef appear in this country.

3. Next pair the healing spirits with organic vibrancy, give it a good whisk and you’ll have a glowing plate of farm-fresh food.

I’ve absolutely adored all things kitchen and eating since my earliest days, the days only remembered through the stories my mom tells. At the panic of losing a small toddler at a dinner party my mom knew her eyes only needed to search the perimeter of the dining table because there you could see my tiny, optimistic hand blindly reaching for something to eat. I never had dreams of being a chef, until the amount of time I was spending in the kitchen created enough momentum to alchemize my imagination.

The journey into professional cooking is just beginning... and swipe left to see we’re going in an upward breezy direction, Marilyn Monroe fought this similar draft while standing on a subway grate, but I ain’t fighting, we’re in a different century now where veganism is freedom for all.

Walnut Chocolate Cake (vegan gluten-free). No description needed, you know what it’ll turn out looking like. It’s filled with protein, sweetness, omega 3s from the walnuts and the aphrodisiac nature of chocolate. Get yourself on another level with this one. 🤩

Cake ingredients:
2 cups of quinoa flour
1 cup of all purpose gluten-free flour
¾ cup of coconut sugar
1 tbsp of baking powder
1 tsp of salt
⅓ cup of chopped walnuts
⅓ cup of chopped dates
½ cup of coconut oil
2 tsp of vanilla extract
2 cups of almond milk (+1 tbsp of apple cider vinegar to create a vegan buttermilk)
2 tsp of instant yeast

Combine all cake ingredients in order of appearance. Mix thoroughly and pour into a 9 inch cake baking tin. Bake at 400 degrees fahrenheit for 25 minutes or until you poke a toothpick through and have it come out clean. Once it has cooled, take it out of the tin and use a bread knife to cut it in half through the middle.

Chocolate icing:
½ cup of melted cacao butter
½ cup of cacao powder
3 tbsp of coconut oil
⅓ cup of powdered coconut sugar

Put a metal mixing bowl on top of a medium saucepan with boiling water in it. Add all the chocolate ingredients to the mixing bowl. Powdered coconut sugar is not necessary but it helps with texture, simply blitz it in the blender for 20 seconds to make a powder. Once the chocolate is done, dip first the bottom half of the cake in the chocolate liquid. While it’s cooling, make the filling to spread on top once the chocolate has hardened.

Filling ingredients:
¼ cup of h**p seeds
⅓ cup of date paste
3 tbsp of chia seeds
1 tsp of vanilla extract
¼ cup of almond milk

Whisk them together and wait for the chia seeds to activate and create a thick caramel spread for the middle of the cake. Spread it on the bottom half, then dip the top half in chocolate and place it carefully on top. Let the chocolate harden.

Caramel candy top layer:
⅓ of a cup of coconut sugar
Juice of half a lemon

Melt the sugar at a medium temperature in a frying pan until it becomes a caramel liquid. Pour this on top of the cake. Garnish with candied walnuts (repeat this process with less sugar and walnuts in the pan to make your own glazed walnuts).
