Our Lemon and Ginger Infusion has a bold kick that you’ll either love or hate. But what did the judges have to say about it?

“This thick textured creamy honey with a surprise - and a considerable kick. The warmth of lemon leads the parade, but it is quickly followed by the ginger, which is robust and long-lasting - and keeps on growing through the journey.”
 
“Thick has a thick fudgy texture, almost chewy and bold aroma of ginger. This brings to mind ginger nut biscuits. A definite fiery note of heat from the ginger makes this really tickle alongside a brightness from the lemon. The honey almost get forgotten, coming into third place - we would like the honey to shine more as the ginger is dominant. Any floral blossom notes have been squashed by the ginger. We are left with ginger heat, not unpleasant but persistent”
 
“This is a rich creamy texture and there is an initial honey sweetness on the palate. But within seconds the ginger comes through and is overwhelming. You could question whether lemon and ginger is a good addition to honey, and perhaps it could work, but in this case, the ginger is so fierce and raw that it masks the honey and lemon.”
 
Next year, we’re looking to submit more infusions for the awards and hopefully win even more!
