COBY SOURDOUGH

In the warm heart of the Witch’s Kitchen, where spells simmer and ferments awaken…
a humble SCOBY may be transformed into a Levain of Living Bread Magic.
Ingredients for the Awakening:
• A small piece of SCOBY (torn or chopped finely)
• Strong bread flour
• Pure water
The Rite of the Starter:
1. Mince or blend the SCOBY into a soft paste.
2. Mix with equal parts flour + water in a clear glass jar.
3. Cover lightly — allow the breath of life, but keep pests out.
4. For 3–4 sun cycles, repeat the daily feeding:
– Remove half
– Add 50g flour + 50ml water
5. When bubbles rise, the scent turns tangy, and the mixture grows — the Levain Spirit
awakens.
The Bread Spell:
Ingredients:
• 150g awakened SCOBY starter
• 350g strong flour
• 250ml warm enchanted water
• 1 tsp salt
The Baking Enchantment:
1. Combine flour, water, salt, and starter.
2. Stir counter■clockwise to bind intention.
3. Knead until the dough becomes smooth like moonlit skin.
4. Leave to rise 4–6 hours.
5. Shape with gratitude; rise 1–2 hours more.
6. Bake at 230°C for 30–35 minutes until crackling
