Friday calls for something a little more indulgent… 🥞🍫

With the weekend around the corner, this is your sign to slow down and make this kind of breakfast.

These chocolate mushroom pancakes are rich, fluffy and finished with cacao nibs for a little crunch.

Chocolate Mushroom Pancakes with Cacao Nibs
(Makes 6–8 small pancakes)

Ingredients

3/4 cup all-purpose flour
1/4 cup Naturya Cacao Powder
1 tsp baking powder
1–2 tsp Naturya Mushroom Superfood Blend
1/4 tsp salt
1 cup plant milk
1 tbsp apple cider vinegar or lemon juice
2 tbsp coconut oil
1 tsp vanilla extract
2–3 tbsp maple syrup
2 tbsp Naturya Cacao Nibs

Toppings

Melted dark chocolate
Sliced banana
Coconut yogurt
Mint

Method

Mix plant milk and apple cider vinegar, then let it sit for 5 minutes.

In a bowl, combine flour, cacao powder, baking powder, mushroom blend and salt.

In another bowl, mix the plant milk mixture with coconut oil, vanilla and maple syrup.

Pour the wet into the dry and stir until just combined. Fold in the cacao nibs, don’t overmix.

Heat a non-stick pan over medium heat and lightly grease.

Pour around 1/4 cup batter per pancake and cook for 2–3 minutes on each side, until bubbles form and the edges are set.

Stack, drizzle with melted dark chocolate, add coconut yogurt and sliced banana.

Nothing says Easter baking quite like carrot cake 🐣🥕

So we made a lighter version: soft vegan carrot cake cupcakes with a creamy pistachio frosting and a little boost from our Naturya Chia Seeds.

🗒️Save this one for your Easter baking

Healthy Vegan Carrot Cake Cupcakes with Pistachio Frosting
(Makes 8–10)

Ingredients

🧁Cupcakes
1½ cups oat flour
1 tsp baking powder
1 tsp baking soda
1½ tsp cinnamon
¼ tsp nutmeg
Pinch of salt
1½ cups finely grated carrot
2 ripe bananas, mashed
⅓ cup maple syrup
⅓ cup almond butter or oil
½ cup plant milk
1 tsp vanilla
1 tbsp Naturya Chia Seeds

Frosting
4–5 tbsp vegan cream cheese
1–2 tbsp maple syrup or icing sugar
½ tsp vanilla
1 tsp lemon juice
2–3 tbsp finely chopped pistachios

Method

Preheat oven to 180°C and line a muffin tray.

Mix oat flour, baking powder, baking soda, cinnamon, nutmeg and salt.

Add grated carrot, mashed banana, maple syrup, almond butter (or oil), plant milk, vanilla and chia seeds. Mix until combined.

Divide into cases (¾ full) and bake 18–22 minutes until a skewer comes out clean.

Cool completely.

Mix frosting ingredients until smooth, spread over cupcakes and finish with chopped pistachios.

Simple Easter baking, sorted.💛
