🥭🌶️ Red Lentils with Mango & Chilli Honey Halloumi
Ingredients:
1 cup red lentils, rinsed
150g halloumi, cubed
1 cup ripe mango, diced
1 onion, chopped
2 garlic cloves, minced
1 tsp grated ginger
1 tsp ground cumin
½ tsp turmeric
1–2 tbsp chilli honey (to taste)
1 tbsp olive oil
1 cup coconut milk
1 cup water or vegetable broth
Salt & pepper, to taste
Fresh coriander, chopped
Instructions:
Pan-fry halloumi in olive oil until golden and crisp on all sides, then drizzle with chilli honey and let it caramelise lightly before setting aside.
In the same pan, sauté onion, garlic, and ginger for 2 mins until softened and fragrant.
Stir in cumin, turmeric, salt, and pepper, allowing the spices to bloom gently.
Add red lentils, coconut milk, and water or broth, simmering 10–12 mins until the lentils are soft and creamy.
Fold in diced mango, letting it warm through and gently melt into the lentils.
Top with the chilli honey halloumi and finish with fresh coriander before serving.
