🍝Monster spaghetti with blood sauce 🍝
Ghoulishly tasty pasta for your family Halloween menu...
🍝Ingredients 🍝
⭐️1 butternut squash, halved, peeled, deseeded and cut into small chunks (or 700g ready chopped)
⭐️Low-calorie cooking spray
⭐️1 large onion, roughly chopped
⭐️2 garlic cloves, chopped or crushed
⭐️¼ tsp dried red chilli flakes (optional)
⭐️1 tsp tomato purée
⭐️400g can chopped tomatoes
⭐️400g dried spaghetti
⭐️½ tsp dried oregano
⭐️100g pimento-stuffed green olives in brine, drained and halved
🤩Method 🤩
⭐️Preheat your oven to 200°C/fan 180°C/gas 6. Spread the squash on a large non-stick baking tray. Spray with low-calorie cooking spray and roast for 30 minutes or until golden and caramelised, turning halfway.
⭐️While the squash is roasting, spray a large non-stick saucepan with low-calorie cooking spray and put it over a medium-high heat. Fry the onion for 7 minutes, stirring and adding a splash of water if it starts to stick. Stir in the garlic and chilli flakes (if using), then the tomato purée and tomatoes. Bring to the boil, turn down the heat to low and simmer for 15 minutes until thickened.
⭐️Cook the spaghetti following the pack instructions, then drain, keeping 100ml of the cooking water. When the spaghetti is almost ready, use a stick blender to blitz the tomato sauce until smooth.
⭐️Stir the spaghetti cooking water into the sauce. Add the squash, spaghetti and oregano, stir everything together, then divide between 4 bowls. Divide over the olives and add a twist of black pepper to serve.
