This one’s a cozy, flavor-packed vegetarian dream. Perfect for a quick dinner that looks just as good as it tastes! 🌱💛

⚡ Why You’ll Love It
• Fiber-rich → happy gut & fullness

• Perfectly balanced carbs, protein & healthy fats.

Ingredients
• 1 aubergine (eggplant)
• 1 onion (chopped)
• Handful mushrooms (sliced)
• 1 tin chopped tomatoes
• 1 tin kidney beans (drained)
• A handful of spinach
• 50 g feta cheese
• Grated cheddar (for topping)
• Fresh dill (to garnish)
• Coconut oil, salt, pepper & paprika

Method
1. Slice aubergine in half, scoop out the flesh & set aside.
2. In a pan, heat a little coconut oil. Fry onions, the scooped aubergine flesh & mushrooms until soft.
3. Stir in tomatoes, kidney beans, then add spinach & crumble in feta. Season with salt, pepper & paprika.
4. Stuff the aubergine halves with the mix, sprinkle generously with grated cheddar.
5. Bake at 180°C for 15 mins until golden & bubbly.
6. Finish with fresh dill on top 🌿

Serve warm & enjoy! 💫
