Method:

2๏ธโƒฃ Freeze overnight until solid.
3๏ธโƒฃ Process in a Ninja (Ice Cream mode) until perfectly creamy.

Ingredients:

๐Ÿซ˜ 1 tin chickpeas
๐Ÿ˜ 6 plain rice cakes
๐ŸŒด 6โ€“8 medjool dates
๐Ÿซ 2 tbsp cacao powder
๐ŸŒ 1 ripe banana
๐ŸŒผ 1 tsp vanilla
๐Ÿง‚ Pinch of salt
โœจ Optional: ๐Ÿซ vegan dark chocolate chips
๐Ÿฅœ Peanut butter powder (for dusting)

How to make this:

1๏ธโƒฃ Add all ingredients to a food processor and blend until combined.
2๏ธโƒฃ Roll into balls and place on sticks.
3๏ธโƒฃ Dip in melted dark chocolate and sprinkle with peanut butter powder.

Tips:

๐Ÿ’ก Use very ripe bananas for maximum natural sweetness.
๐Ÿ’ก If your dates are dry, soak them in hot water for 5โ€“10 minutes before blending.

Totally oil free, low calorie density and loaded with veggies โœจ

Ingredients:

๐Ÿฅฌ 1/2 cup vegan kimchi
๐Ÿฅ’ 1 courgette, grated
๐Ÿฅ” 1 potato, grated
๐ŸŒพ 3/4 cup chickpea flour
๐Ÿ’ง 1/2 cup water
๐ŸŒฝ 3 tbsp corn starch
๐Ÿง‚ 1 tbsp salt

Slaw:

๐Ÿฅฌ 1/4 cup cabbage
๐Ÿฅ• 1 carrot

Low fat vegan mayo (recipe in my new cookbook ๐Ÿ”— in my bio)

Lettuce

1. Add kimchi, courgette and potato to a bowl. Mix together chickpea flour, cornstarch, water and salt and add to veggie mix.
2. Lay flat on a baking tray and bake for 20 mins at 180 Celsius or until cooked.
3. Mix together cabbage, carrot and vegan mayo and add to the flatbread with lettuce and roll up!
