It’s a new beautiful day! I thought I’d share my favourite summer breakfast or snack. Chia seed pudding with minty mango!

Ingredients:
3-4 flat spoons of chia seeds
A small tub of yogurt (I used coconut flavour)
One mango
A couple of mint leaves

Method:
Add the yogurt and the chia seeds into a small bowl then mix the ingredients well.
Leave it on the side for around 15 minutes but from time to time mix them again. The end result should be a thick consistency.
Peel and cut your mango into squares and chop the mint leaves finely. Mix together
When all ready serve the minty mango the top of the chia pudding.
