Rosehip soup.. soooo good, packed with vitamin c, two ingredients and just delicious.

Pick some rosehips, cover with water and add a bit more, boil until soft, stick it all in the blender and blitz until smooth (you might need to add a bit more water as it can get thick). Strain through a fine sieve TWICE and then warm through, adding a teaspoon of good honey at the last minute.

You can get fancy and add youhurt or seeds but it's perfect just as it is. ❤️ Xx

Ooh and a coffee with collagen.

Getting the protein in can be tricky but makes such a massive difference to how I feel. If i dont have enough, the sweet cravings creep in, I don't sleep so well, my energy dips. Some days I get it right, others not so much.. today I think was good!
I'm trying to get stronger this year, build muscles, support bones and joints.

Anyone else find protein hard to get and confusing about how much to have!?

Saffron & lemon stewed windfall apples 🍎 😋 😍
So delicious, amazing for your gut and mood, and the colour!!! Like a sunset.
Just add a generous pinch of saffron and 1/4 finely sliced lemon with the rind on to some chopped apples (skin on), then stir through some raw honey 🍯 and a little coconut oil when they are cooked and cooled.
Can't beat some of this with breakfast or with a little yoghurt, some sprinkled granola or just on its own.

The mighty hummus with lemon, harissa and coriander chickpeas for lunch today 😋😋😋
I don't often make hummus because quite frankly just don't have the time or energy! But it is so delicious and easy that every time I do, it's totally worth it!

A happy new year hug in a bowl! ❣️
Super quick roasted pepper, tomato and lentil soup..
🧅2 small onions chopped
🧄3 garlic cloves chopped
🫒A generous glug of extra virgin olive oil
🍅6 medium tomatoes chopped or a tin of plum tomatoes
🌱A bunch of basil
🫘80g red lentils rinsed
🥃750 ml bone broth / veg stock
🧀A parmesan rind (optional)
🍅A jar of roasted red peppers
S&P
Sautée the onions and garlic with a little salt in the olive oil on a low heat with the lid on for around 10 mins.
Add the tomatoes, stock, basil, lentils and parmesan rind, then simmer for 15 mins. Add the drained peppers and remove the parmesan rind, then season and blend.
This is delicious with a dollop of yoghurt, chilli flakes or toasted seeds on top!

FRIDAY FUDGY BEETROOT BROWNIES!
Just so good! 💜🤎💜
250g cooked beetroot
250g dark chocolate
200g butter
3 eggs
1 tsp vanilla extract
150g dark muscovado or coconut sugar
50g cocoa powder
50g gram / chickpea / rice flour
1 tsp baking powder
100g ground almonds
2 handfuls hazelnuts
Heat oven to 180c, line a 18x28cm tin or dish with baking paper
🍫Melt chocolate and butter in a bowl over a pan of boiling water.
🥚Blend beetroot, eggs, vanilla and sugar to a puree in a blender or food processor
🧆Mix the remaining dry ingredients in a bowl.
🥄Tip the chocolate mixture into the beetroot mixture, stir well, then tip in the dry ingredients and gently mix until smooth. .
🌰Top with crushed hazelnuts
Scrape into the tin, then bake for 30-35 mins.
Leave to cool, the slice and keep in the fridge.

Mango milkshake.
Great for getting some goodness into children, teens or yourself. I've been talking a lot about blood sugar balance and sports nutrition in clinic this week so here's a good one for both of those areas!
Serves 2
🍌1/2 banana
🥭1 Mango, chopped and frozen
🍶400ml natural kefir or live yoghurt
🥜2 heaped teaspoons ground Flax
🍯A drizzle of honey (optional)
Great for hormones, gut, energy and taste buds!
