How to identify wild garlic in the UK ✨

It is very important to identify wild garlic correctly. There are some toxic lookalikes that grow alongside wild garlic.

Wild garlic has the following features πŸ§„

It has a strong garlic smell when the leaves are crushed β€” this is the most distinctive feature and you should check this attribute on the leaves as you pick and also as a final check before you use them.

Leaves are broad and lance shaped and pointed. They are smooth with a central vein and each leaf grows from a single stalk (ie not branching off from a central stem).

When wild garlic flowers, it has small, star shaped white flowers.

It grows in the UK between March and June.

Wild garlic is found in damp shady areas, often in woodland or near riverbanks and grows in large patches or carpets.

Other toxic plants which grow in the UK and elsewhere which can resemble wild garlic and should be avoided:

Lily of the valley – similar leaf shape, but no garlic smell, very poisonous.

Autumn crocus – similar leaves but no garlic smell, also toxic.

Lords-and-ladies – very common in same habitats; younger leaves look similar, but no smell and toxic.

A S P A R A G U S

Asparagus is in season in the UK from now until mid June πŸ’š

When it’s out of season in the UK, it’s almost always flown over to the UK from Peru, making it much less carbon friendly ✈️

πŸŒ… Some UK farmers start rare able to produce as early as February if you’re able to find their produce - John Lewis and M & S boast early season starts from their growers.

It comes in three colours..

πŸ’šGreen season peaks April to mid June. It has a mild, grassy earthy flavour with a hint of sweetness.

πŸ’œPurple season starts in May until June and is sweeter than green.

🀍 White is grown in the dark and is available mid April to mid June. It is slightly sweeter than green, and less grassy in flavour.

Cooking methods include - steaming, roasting, grilling, air frying, sauteed or shave or grate and eat raw in salads ✨

πŸ€“ To store in the short term - trim the ends and place the stalks upright in a glass or jar with an inch of water, like fresh flowers.
Cover loosely with a plastic bag and store in the fridge.

❄️ Or, to enjoy UK asparagus all year around blanch the spears in boiling water for 2-3 minutes, then freeze them for up to a year.

πŸ— πŸ₯“ πŸ’š TASTY CHICKEN, HAM, LEEK & POTATO PIE πŸ’š πŸ₯“πŸ—

This is a great option, for a complete make ahead meal for the family 😎

I like to make it when I have a spare half hour during the day, so that it frees up extra time at night when it’s busier and all the kids are back 🀯

Leeks can be used in the Autumn/Winter and Spring Onions can be substituted in the Spring/Summer! πŸ‘ŒπŸ»

Only a pan and a baking dish to wash, and costs around Β£11 to make, even with the time saving frozen mash πŸ€‘

Serves 4 as a main meal.

30 minutes prep and 30 mins or 45 mins cook time from fridge cold.

🧈 Ingredients
155g Smoked Bacon Lardons
550g Boneless and Skinless Chicken Thighs or Chicken Breast
2 Leeks – chopped into Β½ moons
50g Butter
50g Flour
700ml Boiling Water mixed with 2 Chicken Stock Cubes
1/3 cup Greek Yoghurt
Β½ tsp Dried Rosemary
ΒΌ tsp Salt
2 tsp Dijon Mustard
Β½ tsp Freshly Ground Pepper
1 tsp White Wine Vinegar
920g Mash – I use defrosted Frozen Mash to keep to the timings and reduce washing up.
1 tbsp Wholegrain Mustard
100g Mature Cheddar – grated

⏰ Method
1. Preheat oven to 200c if not making ahead.
2. Add olive oil to pan and add bacon for 3 minutes on medium high heat.
3. Add chicken to the same pan and cook for 5 minutes or until just cooked through. If there is excess water in the pan from cooking, use some kitchen roll to dry this up - so the chicken and bacon can continue to brown.
4. Add the butter to the pan and melt, add leeks to the same pan and cook for 2 minutes.
5. Add flour and stir to coat all the ingredients.
6. Add the stock gradually and stir constantly until a smooth sauce develops.
7. Add the yoghurt, rosemary, Dijon, vinegar, salt and pepper and stir. Transfer to a baking dish.
8. Mix the defrosted potato with the wholegrain mustard and top the pie before adding a layer of cheese.
9. Pop in the Fridge, or the oven for depending upon your desired meal time.
10. 45 minutes at 200c from fridge cold, or 30 minutes at 200c if filling still hot from pan.
