We have been lucky this year that after so much solitude over the lockdown in 2020 that the year 2021 has had us sharing our home (or family sharing their home with us) with many friends and family.
Sometimes you surprise your houseguest (your current closest neighbors) by knocking on their door with fresh oatmeal cookies before noon. Rationale for eating these for a late breakfast? They are full of fiber and healthy ingredients!
1/3 cup honey or maple syrup
1/4 cup coconut oil
1 large egg
1 tsp vanilla
3/4 cup oats (I pulverized in blender)
1/2 cup whole wheat flour (I used whole wheat white)
1 packet Sunrider Nuplus
(or substitute 1/4 cup oatmeal)
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 cup chocolate chips or raisins
Mix the wet ingredients and dry ingredients separately and then together. Bake in a 350 for about 8 minutes.
These little cookies are fluffy and delicious and I hope you like them! And maybe you might eat them for breakfast too🍪
