CREAMY LEEKS, PEA & CHIVES PASTA
WITH ROSEMARY BEEF MEATBALLS .
For the pasta
• 250g pasta of choice
• 1 large leek, finely sliced
• 1 cup peas, fresh or frozen
• 2 cloves garlic, minced
• 1 tbsp olive oil
• 150ml single cream or oat cream
• 2 tbsp cream cheese or soft cheese
• Handful fresh chives, chopped
• Salt & black pepper, to taste
• Optional, grated parmesan
For the rosemary beef meatballs
• 400g minced beef
• 1 tsp fresh rosemary, finely chopped
• 2 cloves garlic, minced
• 1 egg
• 3 tbsp breadcrumbs
• Salt & black pepper
• 1 tbsp olive oil for cooking
