Coconut Kefir Yoghurt Bowl 🥥

To make the Chia Pudding:
2 tbsp of chia seeds
1/2 cup of coconut kefir (we used Cocos) - i reckon tag these lot so we can get some free products lol
2 tbsp of yoghurt of your choice - coconut, greek, natural, soy
Handful of raspberries + blueberries
1 fig quartered
1 cup of buckwheat granola (recipe below)

Combine the chia seeds and coconut kefir and leave for at least 20 minutes. Add the yoghurt, chia pudding, and toppings. Finish with a sprinkle of granola.

To make the Buckwheat Granola:
3 cups raw buckwheat groats⁠
3/4 cup chopped raw nuts or seeds (almonds, cashews, and walnuts)⁠
1/2 cup unsweetened coconut flakes (or shredded coconut)⁠
2 tbsp chia seeds⁠
1/2 tsp sea salt⁠
3/4 tsp ground cinnamon⁠
1/4 cup coconut oil⁠
3 tbsp tahini⁠
1 tsp of vanilla paste⁠
1 tbsp of nut butter drizzled (optional)

Preheat your oven to 170°C/150°C fan. Line a baking tray with parchment.⁠ Mix the, buckwheat, coconut, chia seeds, and salt in a bowl.⁠ Melt the coconut oil, stir in the vanilla paste and tahini. Pour over the granola mix and stir well. Bake for 15 minutes.⁠ Allow to cool. It will crisp up further.⁠ Store the granola in an airtight container for up to 6 weeks.

This Jerk Salmon with Plum Salsa recipe balances blood sugar with the perfect trio of protein, fat and fibre. Protein-rich salmon paired with healthy fats from olive oil and avocado help slow glucose absorption, while fibre-packed fruits, veggies and herbs help to further moderate blood sugar spikes - also adding vibrant flavour. Spices such as jerk seasoning are also known for their potential to improve insulin sensitivity. An easy, nutrient dense dinner that’s as friendly on your plate as it is on your pancreas - enjoy!

INGREDIENTS:
For the salmon:
- 2 salmon fillets if vg/v use tofu
- 3 tbsp of jerk seasoning or paste
- 2 tsp of olive oil
- 1/2 juice of lime

For the salsa:
- 1 plum diced
- 1 avocado diced
- 1 large tomato diced
- 1/2 red onion diced
- 1/2 red chilli finely chopped
- Handful of mint
- Handful of coriander
- 1/2 lime juice
- 1 baby cucumber diced
- 1 tbsp of olive oil
- Salt and pepper

METHOD:
1. Marinade the salmon by adding all the ingredients together and leave for at least 30 minutes or overnight.
2. Make the salsa by combining all the ingredients and mix well.
3. Heat a pan with a little olive oil, and fry the salmon off skin side down, this will make it crispy for 8-10 minutes.
4. Plate your salsa and salmon up.
