Coconut Kefir Yoghurt Bowl 🥥
To make the Chia Pudding:
2 tbsp of chia seeds
1/2 cup of coconut kefir (we used Cocos) - i reckon tag these lot so we can get some free products lol
2 tbsp of yoghurt of your choice - coconut, greek, natural, soy
Handful of raspberries + blueberries
1 fig quartered
1 cup of buckwheat granola (recipe below)
Combine the chia seeds and coconut kefir and leave for at least 20 minutes. Add the yoghurt, chia pudding, and toppings. Finish with a sprinkle of granola.
To make the Buckwheat Granola:
3 cups raw buckwheat groats
3/4 cup chopped raw nuts or seeds (almonds, cashews, and walnuts)
1/2 cup unsweetened coconut flakes (or shredded coconut)
2 tbsp chia seeds
1/2 tsp sea salt
3/4 tsp ground cinnamon
1/4 cup coconut oil
3 tbsp tahini
1 tsp of vanilla paste
1 tbsp of nut butter drizzled (optional)
Preheat your oven to 170°C/150°C fan. Line a baking tray with parchment. Mix the, buckwheat, coconut, chia seeds, and salt in a bowl. Melt the coconut oil, stir in the vanilla paste and tahini. Pour over the granola mix and stir well. Bake for 15 minutes. Allow to cool. It will crisp up further. Store the granola in an airtight container for up to 6 weeks.
