Tomato cake.

Ingredients:

A)
1 cup tinned tomatoes
1 banana
1/2 cup oil
1/2 sugar

B)
2 cups of flour
1 tsp soda
1tsp baking powder
1tbsp cinnamon
1tsbsp powder ginger

Method:

1. Blend all the A ingredients.
2. In a separate bowl mix all B ingredients.
3. Combine them together and bake at 180C for 45-50 min.

Scramble oats.

Ingredients:
onion, 1/2 cup oats, 1/2 tsp black salt, 1/2 tsp. turmeric, 1 tbs nutritional yeast, mushroom, spinach, optional : oil, peppers, tomatoes, avocado.

Method:

Fry onion on water or oil, add mushroom, peppers and fry til they are soft. Add 1 cup of water and 1/2 cup of oats and cook till soft. Next add salt, turmeric, nutritional yest and spinach. Add any additional ingredients of your choice. . Serve with bread. Done

One minute oat pancakes.
Oats are a good source of B vitamins that help maintain
energy levels, manganese needed for regulation of blood sugar, magnesium for healthy bones and teeth, copper for healthy nerve cells and an immune system, fiber and beta-glucan that help reduce cholesterol, control appetite.
Ingredients: oats, banana, nut milk.
Method: Blend all ingredients together. Preheat non-stick pan and pour small amount. Once the air bubbles pop up on the surface flip it and fry another minute until slightly brown.
Add toppings of your choice etc.: maple or date syrup, fruits, nuts

Farinata.

Ingredients:
1.5 cup of ground chickpea flour
1 teaspoon kosher salt
2 cups water

Optional: Rosemary , sundry tomatoes, spinach.

Method:
1.Combine chickpea flour,salt and water until a smooth, thin batter forms. Let stand, covered, at least 2 hours.

2.Preheat oven to 240C. Poor mixture into non sticky tin and bake for 25 min.

3. Let it cool and enjoy.

Camembert.

Ingredients:

75g raw cashews, soaked for at least 4 hours (preferably overnight)
200ml water
1 tsp flaky salt (halve if using fine salt)
1 large clove of garlic
1 tbsp nutritional yeast
1 tsp apple cider vinegar
2 tbsp tapioca flour/starch
a small bunch of rosemary- add when baking
2 garlic cloves
1/2 tbsp olive oil
freshly ground black pepper

Method:
Preheat your oven to 180°C and line a small dish with grease proof paper.
Add all the Camembert ingredients to a blender and process until you have a completely smooth liquid.Pour the liquid into a saucepan and cook over a low-medium heat stirring constantly with a spatula. It will start to thicken,The mixture should still be runny enough to pour so be careful not to overcook it. Have a taste to check the seasoning and add a bit more salt if needed. Poor into dish and garnish with rosemary.
Bake for 15 min.

Sausages.

Ingredients:
Sausages : 1 cup vital wheat gluten 3 tablespoons nutritional yeast 1/2 cup vegetable broth 1/4 cup liquid amino acid/ soy sauce, 1 tablespoon olive oil 1 1/2 teaspoons minced garlic

Cooking Broth: 4 cups vegetable broth 4 cups water 1/4 cup tamari.

Method: Stir vital wheat gluten, nutritional yeast, 1/2 cup vegetable broth, liquid amino acid, olive oil, and garlic in a bowl until ingredients come together into a ball. Knead ball until dough has a rubbery texture. Roll into sausage shape and wrap into cling film.
Bring 4 cups vegetable broth, water, and tamari / soy sauce to a boil in a large pot. Cook for an hour, turning patty occasionally, about 1 hour. Allow to cool in broth for 15 minutes before serving.

Miso soup.

That moment when a super quick and healthy meal is needed asap. !

Miso soup is simple to prepare, just mix the paste with a hot water. Miso is a fermented enzyme rich paste made from soybeans, sea salt and koji (a mold starter), and often mixed with rice, barley or other grains. Is a great probiotic that helps to improve the immune system, mood, and helps control appetite.

Wakame is traditionally added to miso along with tofu and spring onion. It is an eatable seaweed that is highly nutritious containing magnesium, iodine which is necessary for the health of thyroid gland, iron, calcium and vitamins as A,C,E and K.

Soya is still a subject of controversy but I personly use it on some occasions making sure is organic and no GMO.

Miso soup with all the trimmings makes an ideal quick and light meal when you are on the go.

Sweet potatoes flatbread.

Sweet potatoes are an excellent source of beta carotene ( vitamin A ) that is needed for an eye health, a strong immune system, and for healthy skin. They are also a very good source of vitamin C, a powerful antioxidant that prevents from many diseases.

Ingredients: 1 cup of all purpose flour, 1 cup of sweet potatoes, a dash of sea salt.

Method: Mix all the ingredients together and knead dough until smooth consistency. Leave it to rest for 10 min. Preheat non-stick pan. By knife, divide dough into small portions and using fingers shape into round pancakes. Fry around 1-2 minutes on each side.

Great to use as a wrap as well with various dips.

Sage has loads of health benefits, can be used as a tea for digestive issues, added to food and used for smudging.

I personally use dry sage for smudging, which means burning. It has a long tradition of purifying and cleansing air from old energies.

Cottage cheese.

Rejuvelac: is made by sprouting a grain, it’s a healthy probiotic, contain vitamins B, K and E, proteins, and enzymes. It is beneficial to digestive system, promoting a healthy intestinal environment.
1/2 cup sprouted quinoa 4 cups filtered water
Place quinoa and the water in a jar. Leave in a warm place for 24-48 hours. You will see a little fizz. The liquid should be a little tart but not off.

Cottage raw cheese:
2 cups cashews1/2 cup rejuvelac
Cover cashews with water and soak overnight. Drain off water and blend with rejuvelac until smooth paste, pinch of salt can be added as well other herbs.
Line a strainer with 2 layers of cheese cloth and spoon mixture in. Set in a warm place and Let set for 24 hours in a warm place. Coating is optional and I choose to use hive and shaped it round. Refrigerate and store it for a week.
