Let them eat quiche! So not exactly the suggested coronation quiche (beans in quiche 🫤?).

My version used a perfect GF crust using frozen pastry , pancetta, a few mushrooms, fresh spinach, cheddar, eggs and cream. No one could believe it was GF! Seemed like the right thing to eat all morning watching the coronation! 👑🥂👑

Fast 🏃🏼‍♀️slow 🐢 cooked lamb.

I love lamb that is slow cooked for hours and aromatically falls off the bone. 😋However I never like planning my day around starting dinner before lunch. 😕Enter the - nothing short of life changing.

This recipe is , and perfect for Easter. 🐣 (If you don’t need it to be low fodmap then feel free to add some garlic. But honestly it is so flavourful without!) Start by browning lamb shoulder or boneless leg of lamb with garlic oil, then add fresh rosemary, orange zest 🍊and juice, a cup of stock, salt & pepper. Instant pot for a full hour, with natural release.

Topped with thin sliced fennel, sliced blood oranges, coriander and pomegranate with a citrus vinaigrette. Served with rosemary polenta, roasted rainbow carrots 🥕 and green beans. Jus from cooking is fabulous as well. Looks like you were in the kitchen all day…except you weren’t. 🤫 Shhhh.

Almond cookies. 🙌 When you want to bake, but really can’t be asked to get out more than 3 ingredients. Almond flour, sugar, egg whites. Done ✔️. Got fancy and added blood orange 🍊 zest, almond extract and some almonds - so that no one could accuse me on not making an effort.

Back to autumn 🍁cooking…this time with added adventure! 😱 Purchased an Instant Pot Duo over the summer and never really used it. Pretty much felt like using the pressure cooking function stood a non-negligible risk of blowing up my kitchen and 3rd degree burns. (Incidentally that was a real risk as it was assembled incorrectly for the first couple of go’s 🤯😳).

Now I’m a bit more confident, kitchen remains intact and I’ve tried more recipes. Still learning about layering ingredients. 😬 Lovely not to feel so much pressure (pun 😝) to get ingredients in the slow cooker 6 hours before dinner.

Tonight, Moroccan Chicken Tangine - sautéed chicken thighs in garlic oil then added courgette, carrot, a bit of cubed sweet potato and butternut squash, spring onion greens, chick peas, preserved lemons, green olives, seasoning (cumin, ginger, hot smoked paprika, coriander, asafoetida, cinnamon, turmeric salt and pepper), chicken stock with saffron. 13 minutes in the Instant Pot. Added kale after cooking. Serve with corn couscous for GF, all Fodmap friendly. This can also be made stovetop, slow cooker, or in the oven. What should I try next?…

Bacon BBQ Chicken Cobb Salad 🥗

Probably my favourite new dish of the summer - everyone can pick what they like/can eat - Fodmap or not! Grilled corn, peppers and radishes. Roasted potatoes and red cabbage. Sliced tomatoes, red onions, avocado and jicama. Sides of bacon and blue cheese. All over a spinach salad dressed with a warm bacon dressing and with grilled bbq chicken.

Stormy weather 🌧 💨 calls for soup. Not the kind that you plan or shop for, but the type you raid the veg drawer, cross your fingers, and allow to simmer 🍲. A version of my favourite minestrone - leek greens, carrots, parsnips, a single courgette, butternut squash, a handful of baby potatoes, cannellini beans, parley, kale, pancetta, stock, a dollop of pesto, and a sprinkle of cheese.

Watching the winds from - which incidentally shares the name of my mother in law, who was also quite spirited…and never wasted anything!

Beautiful flowers 🌷🌷, fragrant candles 🕯, champagne 🥂 and lively conversation will always disguise that you put virtually no effort into your hors d’oeurves. Incidentally this was followed by the most delish Cioppino (Italian seafood stew) - made both fodmap friendly and a version for those who tolerate onions/garlic.

It must be autumn 🍂 traybakes are back. My family slammed me a bit for not posting photos of summer cooking- too much time enjoying the moment 🏝 and not enough time with a camera.

So not exactly a ‘tray’ - more of a roasting pan - but equally easy.

Quartered potatoes, sliced parsnips and carrots to form the base. Roasted with garlic oil and a teaspoon of Rose Harissa. Top with a chicken, basted with the same oil and harissa. (Harissa can contain varying amounts of garlic - pick one that has garlic at the end of ingredients - or none at all.) When the chicken is nearly done, add some broccoli or other greens to the pan. Great to soak up the liquids. (mainly I added it to the pan because I was lazy and didn’t want to get another pan on the stove.💁‍♀️) Roasted at a high temp - 230C. Don’t allow to burn.

Perhaps my new favourite roast chicken, and super easy - just like a traybake should be! A firm family favourite. Flavourful, slightly spicy, and it’s own sauce. Maybe I will be forgiven for not posting for months?

It was amazing to be back at Wimbledon this year! I’m not sure whether I was more delighted by our 8th row centre court tickets (thank you for booking) or the amazing ⭐️⭐️⭐️ GLUTEN FREE PICNIC BACKPACK!!!! While not entirely low fodmap, it was a wonder to behold!!! Swipe for menu.

Sure it rained a bit, and we ate on on benches, but there was so much delicious food - and a bottle of wine! Real cutlery, napkins, plates and wine glasses! 😁 Even came with strawberries 🍓 and cream! Thank you for this really thoughtful offering for guests who have dietary needs. I heard that they sold out - so if going next year, book this early.
